Roasted Red Pepper Dip

This is a great alternative to regular chip dip
- 2 medium red sweet peppers
- 2 tablespoons tomato paste
- 1 teaspoon sugar
- 1 teaspoon fresh thyme (or 1/4 teaspoon crushed and dried thyme)
- 1/4 teaspoon salt
- dash of red pepper flakes
- 1 clove garlic, chopped

- 1/2 cup eggbeaters
- 1 tbsp. vanilla extract
- 2 tbsp. cinnamon
Peppermint Chocolate Pudding Pie

This is a recipe I definitely plan to try for Christmas
- 2 cups cold milk
- 2 pkg. (4 serving size) jell-o chocolate flavor instant pudding and pie filling
- 1 honey maid graham pie crust
- 1 cup jet-puffed miniature marshmallows
- 1 (8 ounce) tub cool whip whipped topping, thawed, divided
- 2 (1 ounce) squares baker's semi-sweet baking chocolate
- 1/4 cup crushed candy canes
Hearty Vegetable Stew

This is a simple, healthy and hearty stew
- 2 medium potatoes, diced 1/2 inch cubes (I prefer red skinned)
- 2 small turnips, diced 1/2 cubes
- 2 medium carrots, peeled and chopped
- 2 small zucchini, chopped or 2 medium zucchini, chopped
- 6 cups canned diced tomatoes
- 2 teaspoons ground savory
- salt & pepper
Sort-A Soba Noodle Bowl

- 1 pound whole wheat spaghetti or soba noodles
- salt and freshly ground black pepper
- 2 tablespoons canola oil, divided
- 1 package medium sized shrimp, tails off and de-veined
- 1 bunch of scallions, cut into 3 inch pieces
- 2 handfuls (about 1/2 pound) of string beans, about 1/2 pound, cut lengthwise into strips
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- 3 cloves garlic, chopped
- 1/2 jar (about 1/3 to 1/2 cup) orange marmalade, about 6-8 ounces
- 1/4 cup tamari
- 1 tablespoon chili oil
- 1/4 cup chicken stock (if needed)
- 1 palmful sesame seeds and/or slivered almonds
