Tortilla Espanola (Spanish Potato Omelet)

Beat eggs and add onion, peas, meat, salt and pepper
- 4 whole eggs (beaten)
- 4 med. white peeled potatoes sliced like for hash browns
- 1 small onion diced
- 1 small can peas
- 1/2 c. diced ham or other meat like chorizo (Spanish sausage)
- salt and pepper to taste
- olive oil
Black Beans (Frijoles Negros)

Sort and rinse the beans. Place in a 3 to 4 quart saucepan and add enough water to cover the beans by 2 inches
- 1 pound dried black beans
- 2 tablespoons olive oil
- 1 bay leaf
- 1/2 cup coarsely chopped onion
- 1/2 cup coarrsely chopped green bell pepper
- 1 garlic clove, unpeeled and crushed
- 1/2 cup olive oil
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped green bell pepper
- 12 / teasppons minced garlic
- 1 teaspoon crushed dried oregano
- 1/4 teaspoon ground cumin
- 2 tablespoons red wine vinegar
- 1 tablespoon salt
- 1/2 teaspoon hot pepper sauce
- 2 tablespoons dry sherry (preferably oloroso or amontillado)
Spinach and Ricotta with Shells

In a large pot of boiling, salted water, cook the pasta until al dente, drain and return to the pot

- 1/3 cup extra virgin olive oil
- 1 onion, chopped
- 1 clove garlic, finely chopped

- 1 pound whole milk ricotta cheese, preferably fresh

- 1 egg, lightly beaten
- 3/4 cup shredded cheddar cheese
- 1/2 cup chopped green onions
- 1/4 cup real bacon bits
- 1/2 cup dry bread crumbs
- Oil for frying
30 Minute Almond Chicken

- 8 boneless skinless chicken thighs
- 1/4 c. Kraft zesty Italian dressing
- 1 c. chicken broth

- 1/4 c. (1/2 stick) unsalted butter
