Pain Poilane Au Levain Naturel (Poilane's Natural Sourdough)

NOTES : This is the recipe that Paris's most famous baker, Lionel Poilane, created for the French housewife
- Yield: 1 loaf
- Sourdough starter (ingredients used over 4 days of proofing)
- 1 C Water; room temp
- 2 C BREAD flour
- Final Loaf
- 3 C Water; room temp
- 1 TBS Fine sea salt
- 7 C BREAD flour; (7-8 cups)
Yankee Doodle Cupcakes

Make batter: Heat oven to 325 degrees F
- CUPCAKES:
- 1 cup all-purpose flour
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup boiling water
- 1/3 cup cocoa powder
- 1/3 cup semisweet chocolate chips
- 1 Tbsp. instant coffee
- 3/4 cup sugar
- 1/2 cup sour cream
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp. vanilla extract
- Marshmallow Creme Filling:
- 6 Tbsp. unsalted butter (room temperature)
- 1-1/2 cups confectioner's sugar
- 1/2 tsp. vanilla extract
- 1/2 tsp. salt
- 3/4 cup Marshmallow Fluff
- 2 Tbsp. heavy cream
Chicken Spaghetti

First, fill a pot with water… And put it on the stove to boil
- 2 cups Cooked Chicken (I use a broiler, cut up)
- 3 cups Dry Spaghetti, Broken Into Two Inch Pieces
- 2 cans Cream Of Mushroom Soup
- 2 cups Grated Sharp Cheddar Cheese
- 1/4 cup Finely Diced Green Pepper
- 1/4 cup Finely Diced Onion
- 1 jar (4 Ounce) Diced Pimentos, Drained
- 2 cups Reserved Chicken Broth From Pot
- 1 teaspoon Lawry's Seasoned Salt
- 1/8 teaspoon (to 1/4 Teaspoon) Cayenne Pepper
- Salt And Pepper, to taste
- 1 cup Additional Grated Sharp Cheddar Cheese

- 5 Chiles anchos
- 1/2 teaspoon Coriander seeds (toasted)
- 1/2 teaspoon peppercorns
- 1/8 teaspoon cumin seeds
- 2 tablespoons sweet paprika
- 2/3 cup Mild white vinegar
- 1/2 pound pork fat
- 2 Chilies pasilla
- 3 whole cloves
- 1/2 teaspoon Oregano (Mexican Blended)
- 4 cloves Garlic (peel/crush)
- 2 1/2 teaspoons salt
- 2 fluid ounces Vodka (if wanted)

- 7 ounces (200 grams) best-quality dark chocolate
- 7 ounces (200 grams) unsalted European-style butter (the high-butterfat kind, such as Lurpak or Beurre d’Isigny), cut into 1/2-inch cubes
- 1 1/3 cup (250 grams) granulated sugar
- 5 large eggs
- 1 Tbs unbleached all-purpose flour
