Quinoa Salad with Greilled Cherry Tomatoes

Soak 8 (8-inch) wooden skewers in water for 10 minutes
- 1 cup quinoa, rinsed
- 1/2 cup green beans, cut into 1-inch pieces
- 2 pints cherry tomatoes
- 3 Tbsp. extra-virgin olive oil, plus more for brushing
- 2 Tbsp. white wine vinegar
- 1/2 tsp. kosher salt
- 1/4 tsp. ground black pepper
- 1/4 cup roasted sunflower seeds

Spiced Pancakes

In a med bowl whisk pancake mix, water, pumpkin, cinnamon and ginger until just blended (mixture will be lumpy)
- Syrup:
- 1 c whole wheat pancake mix
- 1 c cold water
- 1/3 c canned pumpkin
- 1/2 t ground cinnamon
- 1/4 t ground ginger
- 5 T pumpkin seeds, toasted
- 1 c maple syrup
Fall Curry Chicken

As fall moves on, it's time for steaming pots of comfort food
- 1 pound boneless, skinless chicken breasts, cut crosswise into 1/4-inch strips
- 1/2 teaspoon salt
- 1 1/2 teaspoons vegetable oil
- 1 small onion, diced
- 2 teaspoons curry powder
- 1/4 teaspoon ground cayenne pepper
- 2 pods cardamom
- 1 tablespoon tomato paste
- 1 cup light coconut milk
- 1 butternut squash (about 1-pound), peeled and cut into 1/2-inch cubes
- 1/4 cup golden raisins
- 1 Granny Smith apple, diced
- 1/4 cup roasted pumpkin seeds
Easy Veggie Soup

Saute onion, thru basil in olive oil
- 1 t olive oil
- 1 small chopped onion
- 1 t minced garlic
- 1 t dried oregano
- 1 t dried basil
- 2 c frozen mixed veggies
- 4 c low-sodium vegetable broth
Apple Fritters

In a large bowl, whisk together flour, granulated sugar, baking powder, and salt
- 2 cups all-purpose flour
- 1/4 cup plus 2 tablespoons granulated sugar
- 2 1/4 teaspoons baking powder
- 1 teaspoon coarse salt
- 3/4 cup whole milk
- 2 large eggs, room temperature
- 2 tablespoons melted unsalted butter
- 1/2 teaspoon pure vanilla extract
- 2 sweet apples, such as Rome, McIntosh, or Gala, peeled, cored, and cut into 1/4-inch pieces (about 3 cups)
- Safflower oil, for frying
- Confectioners' sugar, for dusting
Artichoke and Feta Dip

Preheat oven to 350 degrees
- 12 ounces sheep's-milk feta
- 1/2 cup extra-virgin olive oil
- 1 can (13.75 ounces) quartered artichoke hearts, drained and cut in half
- 5 strips lemon zest
- 1 tablespoon packed fresh oregano leaves
- 1/4 teaspoon red-pepper flakes
Curried Buttermilk Marinade

- Curried Buttermilk
- 2 c low fat buttermilk
- 2 T curry powder
- 2 t fine sea salt
- 1 t ground black pepper
Mini Cauliflower Bites

Preheat oven to 450 degrees
- 5 c. roughly chopped, trimmed cauliflower (about 16 oz)
- 1 large egg, lightly beaten
- 1 1/3 c. finely shredded Italian cheese blend, divided
- 1/2 tsp dried basil
- 1/4 tsp dried rosemary, crushed
- dash salt
- 2 tbsp chopped roasted red pepper, divided
- 2 tbsp thinly sliced green onion, divided
- 72 gluten-free miniature turkey pepperoni slices, such as Hormel (or substitute)
- Tomato Pizza Sauce, optional
Beef Goulash with Potatoes

- 2 pounds skirt steak, cut crosswise into 4-inch-long pieces
- Coarse salt and freshly ground pepper
- 1 tablespoon extra-virgin olive oil
- 2 medium yellow onions, coarsely chopped
- 2 tablespoons red-wine vinegar
- 1/4 cup tomato paste
- 2 tablespoons sweet paprika, preferably Hungarian
- 1 teaspoon caraway seeds
- 4 cups low-sodium beef broth
- 1 1/2 pounds baby potatoes, halved
- Sour cream and chopped fresh parsley, for serving
