Sweet Berry Dressing

In a blender combine juice blend, oil, lemon juice, honey, salt and pepper; process until well blended
- 2/3 cup refrigerated berry-vegetable juice blend (such as Bolthouse Farms 50/50 Berry or Naked Berry Veggie)
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1/4 teaspoon salt
- Dash pepper
- 1 - 1 1/2 teaspoons poppy seeds
Dark Chocolate Pudding

In a small bowl, stir together arrowroot and 2 tbsp soy milk until no lumps remain
- 2 tbsp arrowroot powder
- 2 cups low-fat plain unsweetened soy milk, divided
- 1/4 cup organic evaporated cane juice
- 1/3 cup unsweetened cocoa powder
- 1/2 tsp pure vanilla extract
- 1/4 cup dark chocolate chips (70% cocoa or greater)
- 2 tbsp dark chocolate curls or shavings for garnish (70% cocoa or greater), optional
Brown Sugar-Brined Chicken

1. Stir together first 7 ingredients and 2 qt
- 1/2 cup apple cider vinegar
- 1/4 cup kosher salt
- 1/4 cup firmly packed dark brown sugar
- 1 teaspoon dried crushed red pepper
- 6 large fresh thyme sprigs
- 4 (4-inch) rosemary sprigs
- 4 garlic cloves, crushed
- 8 to 12 (6- to 8-oz.) skinned and boned chicken breasts $

Baked Chicken and Rice Casserole

1. Preheat oven to 350°F
- 1 Tbsp olive oil
- 2 garlic cloves, minced
- 1 cup chopped onion
- 1/2 tsp curry powder
- 1/2 tsp ground cumin
- 1 cup frozen peas, thawed
- 1 lb boneless, skinless chicken thighs, cut in 1" cubes
- 1 cup quick-cooking brown rice
- 1 1/2 cups lower-sodium chicken broth
- 1 14.5-ounce can chopped tomatoes
- 1/2 tsp salt
- 1/2 cup reduced-fat sour cream
Roasted Cauliflower and Chickpeas with Mustard and Parsley

Preheat oven to 400 and set rack in the middle
- 14-oz can chickpeas, rinsed and drained and dried in a kitchen towel
- 1 head cauliflower, outer leaves removed and discarded (or slice and saute them with garlic - they're surprisingly delicious!), cut into bite-sized florets
- EVOO
- Coarse sea salt
- 1 T Dijon mustard
- 1 T seeded mustard
- 1 T white wine vinegar
- fresh ground black pepper
- 1/4 c chopped Italian parsley
Caramelized Peach Ice Cream

- 1 pound ripe peaches (about 3 medium)

- 1 cup long-grain brown rice
- 2 cups small cauliflower florets
- 1 1/2 cup water
- 1/2 cup chopped yellow onion
- 2 teaspoons curry powder
- 1 (14.5 ounce) can no-salt-added, fire-roasted diced tomatoes, with their liquid
- 1 lemon, halved, divided
- 12 ounces boneless, skinless wild Sockeye, Alaskan, Pacific, or Coho salmon fillet, cut into large chunks
