Scalloped Potatoes

Heat oven to 375° F. Butter a 9-by-13-inch or some other shallow 3-quart baking dish
- 2 T unsalted butter, plus more for the baking dish
- 1 med onion, finely chopped
- 2 c heavy cream
- 2 c whole milk
- 1 bay leaf
- 1 t fresh thyme leaves
- 1/4 t ground nutmeg
- Kosher salt and black pepper
- 4 lbs russet potatoes (8 med), peeled and sliced 1/8-in thick
- 6 oz Gruyere or Cheddar, grated (about 1 1/2 c)
Pumpkin Praline Muffins

Combine all the topping ingredients in a small bowl and use your fingers to rub them into a crumbly topping
- PRALINE TOPPING
- 3 tablespoons butter, cut into pieces
- 1/3 cup flour
- 3 tablespoons light brown sugar

- 1 cup whole wheat flour

- 1 t dried thyme
- 1 t dried oregano, divided
- 1/2 t ground black pepper
- 2 cloves garlic, chopped, divided
- olive oil
- 1/2 medium zucchini, cut into 1/2 in wide strips
- 1/2 medium red bell pepper, cut int 1/2 in wide strips
- 1/2 med yello onion, cut into 1/4 in wide strips
- 1 t EVOO
- 1 c tomatoes, seeded, chopped and squeezed to release juices; seeds and juices discarded
- 1 t dried dried basil
- 2 oz shredded cheese
- 14 oz whole wheat baguette
Grilled Breast of Chicken Marsala with Grilled Carrots

1. Mix fennel seeds, salt, pepper and red pepper flakes in a bowl
- 2 t ground fennel seeds
- 1 t sea salt
- 1/2 t freshly ground black pepper
- 1/2 t red pepper flakes
- 4 6-oz boneless, skinless chicken breasts
- 16 small carrots, peeled
- 3 1/2 c marsala or low-sodium chicken broth
- 8 pieces dried porcini mushrooms
- 2 shallots, thinly sliced
- 4 cloves garlic, smashed

- 4 T nonfat yogurt
- 4 sprigs fresh rosemary
Collards with Turkey Sausage and Shrimp

In a small bowl, mix together chile powder, paprika, salt, black pepper and cayenne
- 1/2 tsp chile powder
- 1/2 tsp paprika
- 1/4 tsp sea salt
- 1/8 tsp each ground black pepper and cayenne pepper
- 1 lb large raw shrimp, peeled and deveined, tail off
- 1 tbsp olive oil, divided
- 3 medium shallots, thinly sliced
- 2 lean deli-fresh turkey sausages (7 oz), casings removed
- 1 bunch collard greens (about 1 lb), stems removed and leaves chopped
Apple Strudel with Cinnamon Honey Cream Cheese Sauce

- Strudels:
- 2 1/2 lb Golden Delicious apples (about 5 large), peeled, cored and roughly chopped
- 1 c unsweetened raisins
- 1 c chopped unsalted walnuts, toasted
- 3 T raw honey
- 1 t pure vanilla extract
- 1 t ground cinnamon
- 1/4 t ground nutmeg
- 12 sheets frozen whole-wheat or spelt phyllo, thawed
- 4 T olive oil
- 1/2 c whole-wheat bread crumbs

- 1/2 c low-fat plaini cream cheese (4 oz) at room temp
- 2 T raw honey
- 2 T skim milk
- 1/4 t ground cinnamon
Fried Chicken with Cornmeal Crust

Combine 1 quart water, 1 1/2 cups salt, and sugar in a large pot
- 8 quarts water, divided
- 1 1/2 cups plus 1 1/2 teaspoons coarse salt, divided
- 1 cup sugar
- 2 whole 3 1/2-pound chickens, each cut into 10 pieces
- 2 cups all-purpose flour
- 3/4 cup fine cornmeal
- 1 teaspoon cayenne pepper
- 1 teaspoon freshly ground pepper
- Vegetable oil, for frying
Chard Slaw with Creamy Scallion Dressing

Preheat oven to 375 degrees
- 2 English muffins, split in half
- 2 tablespoons extra-virgin olive oil
- Coarse salt and freshly ground pepper
- 1/3 cup mayonnaise
- 2 scallions, white and pale-green parts finely chopped (about 2 tablespoons), dark-green tops chopped and reserved for garnish (optional)
- 1 tablespoon Champagne vinegar or white-wine vinegar
- 1 bunch (about 1 pound) chard, preferably rainbow
- 1/2 pound cantaloupe, peeled, seeded, and cut into 2-inch pieces (about 2 cups; optional)
