- 3 teaspoons of cream cheese, divided use
- 1 tablespoon ricotta
- 1/4 cup almond flour
- 1 egg
- 1 tablespoon of butter
- pinch of salt
- tablespoon of Xylitol or equivalent in your favorite sweetener
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
- pinch cinnamon
- pinch freshly grated nutmeg (important that it be fresh)

Omelet Muffins

- 1 pound Italian Sausage (sweet, mild, hot variety depending on your preference)
- 1 cup broccoli florets (or other veggie)
- 8 large eggs
- 1/4 cup milk (or half and half depending on how you're feeling that day)
- 1/2 tbsp vegetable oil
- 1/2 tsp baking powder
- salt & pepper to taste

Crock Pot White Chicken Chili (E)

- 4-5 boneless, skinless chicken breasts
- 1 pound bag dried navy beans
- 1 (10-ounce) can mild Rotel, or a store-brand alternative
- 1 (4-ounce) can diced green chilies
- 3 cups fat-free chicken broth
- 1/8 cup chopped cilantro, dried or fresh
- 1-2 teaspoons salt, or more according to taste preferences
- 1 teaspoon ground black pepper
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 2 teaspoons chili powder
- 1 cup plain non-fat Greek yogurt
- additional water as needed during cooking
