Corn and Zucchini Fritters

Grate zucchini and place in a colander
- Dipping sauce:
- 4 green zucchini
- 1 teaspoon (5ml) kosher salt
- 1 egg
- 1 egg yolk
- 1/2 cup (125ml) feta cheese, crumbled
- 1 cup (250ml) arugula, roughly chopped
- 2 tablespoons (30ml) fresh dill, roughly chopped
- 1/2 cup (125ml) green onion, thinly sliced
- 1/2 cup (125ml) cooked corn kernels
- 1/2 cup (125ml) all-purpose flour
- 1 teaspoon (5ml) baking powder
- Salt and pepper
- 1/2 cup (125ml) vegetable oil for frying
- 1 cup (250ml) sour cream
- 1/4 cup (60ml) mayonnaise
- 2 tablespoons (30ml) thin sliced scallion
- Zest and juice of 1 lemon
- 1 tablespoon (15ml) fresh dill, chopped
- 2 teaspoons (10ml) Sirach hot sauce
Tomato sauce

Wash tomatoes and cut in half lengthwise
- 5 lb (2.3 kg) fresh ripe roma tomatoes
- 3 tablespoons (45ml) olive oil
- 1 whole head of garlic
- 1 bunch of fresh thyme about 12 sprigs
- 2 medium Spanish onions diced 1/4 inch (.31cm)
- 2 cups (500ml) Italian red wine
- 1/4 cup (60 ml) fresh oregano
- 1/2 cup (125ml) fresh basil
- Salt and pepper
- Balsamic vinegar or sugar OPTIONAL – see note

Cauliflower and Arugula Salad

In a skillet on medium-high heat, saute the bacon for 5 minutes, stirring often, until brown and crispy
- Salad
- 6 slices bacon, cut into small pieces
- 1 cauliflower, trimmed, cut into small pieces and blanched
- 1/4 cup butter
- 1 teaspoon honey
- 2 tablespoons good quality red wine vinegar
- 4 cups arugula
- 1 shallot, thinly sliced
- 2 tablespoons olive oil
- Salt and freshly ground black pepper
- 1/4 cup pine nuts
Pork Chops with Beer, Cabbage & Apples

- 4 center-cut pork chops, about 1-1/2 inches thick
- Salt and freshly ground black pepper
- 3 Tbs. vegetable oil
- 1 small red onion, thinly sliced
- 1 Tbs. Dijon-style mustard
- 1/2 head Savoy cabbage (about 1 lb.), cored and thinly sliced

Braised Leeks with Hazelnut

1. Place a heavy-based sauté pan over a medium heat and add a dash of oil
- Olive oil, for frying
- 4 leeks, white parts only, cut into pieces 4–5cm long
- 2 –3 garlic cloves, bashed
- 3 thyme sprigs
- Knob of butter
- 150 ml white wine
- 50 g blanched hazelnuts, toasted and roughly crushed or chopped
- 2 tbsp chopped parsley
- Sea salt and freshly ground black pepper

- 3 shallots, chopped
- 3 garlic cloves
- 2 lemongrass stalks (bottom third only, tough outer layers removed), finely chopped

- 2 tablespoons fresh lime juice
- 2 tablespoons tamarind juice concentrate (not paste or pulp) or 1 tablespoons fresh lime juice

- 8 ounces dried rice vermicelli, soaked in cold water for 30 minutes

- 3 shallots, diced

- 4 skinless chicken thigh cutlets
- 2 tbsp cooking oil
- 2 tbsp fish sauce
- 1 medium onion, sliced
- 3 cloves garlic, sliced
- 1/4 tsp freshly ground black pepper
- 1/4 cup light soy sauce
- 2 tbsp palm sugar, grated (or brown sugar)
- 1/4 - 1/2 cup water
- Juice from 1 lime
- Lime wedges to garnish
