Chicken Supreme

Wash chicken breasts and wipe dry
- 12 whole chicken breasts,
- 2 cup sour cream
- 1/4 cup lemon juice
- 4 tsp Worcestershire sauce
- 2 tsp celery salt
- 2 tsp paprika
- 1 clove garlic, minced
- 2 tsp salt
- 1/2 tsp pepper
- Mix all ingredients well.
- Bread crumbs, but not in above mixture.
Spinach bread

Combine all ingredients and spread on halved loaf of french bread
- 1 wide loaf of french bread
- 2 packages chopped frozen spinach, cooked and drained
- 1 1/2 stickes butter
- dash tabasco
- 6 cloves garlic
- grated package of mozzarella cheese
Tamale Pie

Preheat oven to 400°. Grease a large oven-safe skillet with cooking spray
- Cooking spray
- 1 box corn muffin mix (such as JIFFY)
- 1 large egg
- 1/2 c. sour cream
- 1/2 c. canned creamed corn
- 1 tbsp. extra-virgin olive oil
- 1 onion, chopped
- 1 tsp. ground cumin
- 1 tsp. chili powder
- Kosher salt
- Freshly ground black pepper
- 2 cloves garlic, minced
- 1 lb. ground beef
- 1/3 c. red enchilada sauce
- 1 c. shredded cheddar
- 1 c. shredded Monterey jack
Chicken Divan

Preheat oven to 350. In greased casserole dish, place broccoli and chicken
- Sauce:
- 3 boiled deboned chicken breasts
- 1 pkg cooked whole broccoli
- 1 can cream of chicken soup
- 1/2 cup mayonnaise
- 1/2 tsp lemon juice
- 1/4 tsp curry powder
- Bread crumbs
- Butter
Pita Chips

Combine the olive oil, garlic, and Essence in a small bowl and whisk to mix
- 1/2 cup extra-virgin olive oil
- 1 Tbsp minced garlic
- 1 tsp Essence of Emeril
- 4 pita breads, each split in 1/2 and cut into triangles
Cream of Broccoli Soup

Bring stock to boil. Add potatoes, onions, broccoli, salt and pepper
- 6 cups chicken broth
- 3 cups chopped potatoes
- 1 bunch green onions chopped, reserve tops for garnish
- 2 packages frozen broccoli
- 1 Tbsp salt
- dash of red pepper
- 1 cup whipping cream
- sour cream
Chocolate Glaze for Chocolate Bundt Cake

Put choc chips into a medium bowl, set aside
- 1 cup Semi-sweet Chocolate Mini chips
- 2/3 cup heavy cream
- 2 tiny pinches of salt
Spinach Salad

Add spinach to large salad bowl
- 1 11oz container of washed baby spinach (cut stems off)
- 1/4 red onion sliced very thin
- 2 handfuls of craisins (or to taste)
- 1 cup seedless grapes (red or green)
- 2 handguns of halved walnuts or pecans
- 1 lb cooked and crumbled bacon
- 1 4 oz package of crumbled feta cheese
- 1 Granny Smith apple chilled (do not cut until ready to serve, I core apple then quarter it and slice it with a mandoline on a very thin setting)
