Spanish omelet with potatoes and chorizo

Heat oven to 400 Heat 1 tablespoon of the oil in a large ovenproof skillet over medium heat
- 3 tablespoons extract-virgin olive oil
- 1 large yellow onion chopped
- 2 ounces Spanish chorizo (cured sausage), sliced into thin half-moons
- 3/4 pound red potatoes diced Kosher salt and pepper
- 3/4 cup flat-leaf parsley roughly chopped
- 10 large eggs beaten
- 1 cup (4 ounces) shredded Manchego or sharp Cheddar
- 1 small head green leaf lettuce
- 1/2 small red onion thinly sliced

- 1-1/2 pounds boneless skinless chicken breasts cubed
- 1 tablespoon plus 1-1/2 teaspoon peanut oil, divided
- 3/4 cup chopped fresh mushrooms
- 1 can (8 ounces) water chestnuts, drained and diced
- 1 tablespoon minced fresh gingerroot
- 2 tablespoons rice vinegar
- 2 tablespoon reduced-sodium teriyaki sauce
- 1 tablespoon reduced-sodium soy sauce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon crushed red pepper flakes
- 1-1/2 cups shredded carrots

Overnight Crock Pot Oatmeal

First off find a bowl that will hold four cups of liquid, and fit inside your crock pot with the lid on
- 1 cup steel cut oats
- 4 cups water
- (if using a slow cooker liner decrease the water to 3-1/2 cups)
- 1/2 cup half and half or milk
- 1 cup of dried fruit of choice (apple, raisins, cranberries, apricots ect.) or 1 fresh apple (chopped)
- 1/4 cup brown sugar
- 1-tbsp butter
- 1/2 tsp vanilla extract
- 2/3 Tablespoons cinnamon sugar
