- oval platter or board, flat portion at least 10 inches by 7 inches
- pastry bag and number 22 star tube
- plastic swans can be used in place of piped meringue swans. They are
- available at party stores and can be painted with a thin coating of
- Royal Icing
- CAKE COMPONENTS:
- 2 meringue swans and 1/4 cup stabilized whipped cream
- 1 recipe White Chocolate Whisper Cake baked in oval cake pans
- 1 recipe Neoclassic or Classic Lemon Buttercream
- 1 recipe Winter Blueberry Topping

- 50 g butter
- 25 g dark chocolate
- 150 g digestive biscuits, crushed
- For the filling
- 300 g white chocolate, drops or a bar broken into pieces

- 1 tablespoon granular lecithin (optional, but helpful)
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons Princess Cake Flavor or Buttery Sweet Dough Flavor or vanilla
- Filling
- 1 cup Baker's Cinnamon Filling
- mixed with 1/4 cup water*
- Or make your own filling by mixing 1/3 cup butter, 1 cup brown sugar, and 3 tablespoons ground cinnamon.

- 3-ounce package cream cheese, softened
