- 1 lb smoked pork jowl, diced (I think I used some ham and salt pork)
- 2 medium yellow onions, peeled and sliced
- 1 lb green cabbage, cored and shredded
- 2 quarts sauerkraut (packed in a glass jar)
- 1 apple, cored and coarsely chopped
- 2 cups dry white wine
- 1 tablespoon light brown sugar
- 1 teaspoon caraway seed
- 1 teaspoon fresh ground pepper (to taste)

- 2 pounds Yukon Gold potatoes (about 4 large), peeled, quartered lengthwise, and cut into 1/2-inch-thick slices
- 1 cup low-sodium chicken broth
- 1 cup water
- Table salt
- 1 tablespoon sugar
- 2 tablespoons white wine vinegar
- 1 tablespoon Dijon mustard
- 1/4 cup vegetable oil
- 1 small red onion, chopped fine (about 3/4 cup)
- 6 cornichons, minced (about 2 tablespoons) (see note)
