- 1/2 cup King Arthur Unbleached Cake Flour Blend*
- 6 tablespoons sugar, divided
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 3 tablespoons vegetable oil or melted butter
- 3 large eggs, separated
- 1 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
- If you don't have cake flour, use unbleached all-purpose flour, reducing the amount to 7 tablespoons (1/2 cup less 1 tablespoon).
- FILLING
- 2 pounds cream cheese (four 8-ounce packages), at room temperature
- 1 2/3 cups sugar
- 1/4 cup cornstarch
- 1 tablespoon vanilla extract
- 2 large eggs
- 3/4 cup heavy cream or whipping cream
