Hawaiian Ham and Cheese Sandwiches (aka Tailgate Sandwiches)

Preheat oven to 350 degrees F
- 20 small Hawaiian sweet rolls, cut in half crosswise
- 1 pound deli black forest ham, sliced
- 20 slices provolone cheese
- 8-oz. container spreadable cream cheese
- 1/2 cup (1 stick) butter, melted
- 1 tablespoon yellow mustard
- 1 tablespoon Worcestershire sauce
- 2 tablespoons dried minced onions
- 1/4 cup grated Parmesan cheese
- 2 tablespoons poppy seeds
Baked Fresh Cherry Pie

Preheat oven to 400 degrees F (205 degrees C)
- 1 recipe pastry for a 9 inch double crust pie
- 4 tablespoons quick-cooking tapioca
- 1/8 teaspoon salt
- 1 cup white sugar
- 4 cups pitted cherries
- 1/4 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- 1 1/2 tablespoons butter
Gnocchi, Sweet Corn & Arugula in Cream Sauce

In Dutch oven cook gnocchi according to package directions, adding corn the last 5 minutes of cooking time
- 2 small ears of fresh sweet corn or 2 cups frozen whole kernel corn
- 1 pound shelf-stable potato gnocchi
- 3/4 cup half-and-half or light cream
- 1 3 ounce package cream cheese, cut up
- 1/2 teaspoon each salt, garlic powder and dried basil or oregano
- 1/4 teaspoon freshly ground black pepper
- 3 cups torn fresh arugula
- Crushed red pepper (optional)

Instructions combine all ingredients in a pitcher using a large spoon, muddle the fruit to release juices allow
- 56 oz. Moscato wine (I used a large bottle of Barefoot)

French Toast Roll-Ups

Preheat oven to 375. Lightly grease an oblong shallow casserole dish (or similar)
- 1 whole spaghetti squash, roasted, seeds removed, and scooped out (I roasted mine whole for easier handling, see here)
- 2 T extra-virgin olive oil
- 2 cloves garlic, finely chopped
- 1/4 c fresh basil leaves, finely sliced
- salt and pepper
- 1/4 c parmesan cheese, grated
- 1 whole ripe tomato, sliced
