Wayside Inn Corn Muffins

I prefer dividing into 2 bread pans and bake for 25-30 minutes
- Ingredients:
- 1 1/3 cups granulated sugar
- 1/2 tsp salt
- 1 1/3 cups stoneground corn meal
- 7 tsp baking powder
- 3 cups bread flour
- 1 1/2 cups cold milk
- 4 large eggs
- 1/2 cup neutral flavored vegetable oil
Chicken Kale Salad Recipe

Remove stems from kale by pulling from the bottom of stem to top of the leaf
- 1 1 1 bunch of kale
- 1/4 1/4 1/4 c avocado oil
- 1 1 1 c cubed, baked (or roasted) butternut squash
- 1 1 1 c grapes, sliced into halves
- 1/4 1/4 1/4 c red onion coarsely chopped
- 1 1 1 c shredded rotisserie chicken
- 1 1 1 c chopped parsley
- Green Goddess Dressing (Bought from Trader Joe’s)

In a large bowl, beat the cream cheese, sour cream, sugar and vanilla until blended

Roasted Pumpkin Mini Sweet Peppers Appetizer

Easy entertaining: Be prepared, by picking up a bag of peppers at Costco, along with goat cheese and pumpkin butter
- 1 dozen mini sweet peppers (red, orange, and yellow)
- 4 oz semi-soft goat cheese (cream cheese works, too.)

- 1/3 cup pumpkin butter (I buy at Trader Joe’s)
