  • 1/2 finely diced onion
  • 1-2 cloves garlic, minced
  • 8 oz. Spanish style chorizo, casing removed and diced into 1/2" cubes
  • 2 cans garbanzo beans, drained, rinsed and dried thoroughly with paper towels
  • 1 Tbsp. Sherry vinegar
  • 1 bag baby spinach (6 oz., washed)
  • 1 c. fresh bread crumbs, on the chunky side, not too fine
  • Fresh pepper

  • Red onion, 1/4 medium (thinly sliced)

  • Good quality day-old bread, 2 thick slices
  • Garlic clove, 1 (peeled and halved)
  • Ripe Hass avocado, 1/2 (pitted, quartered lengthwise and peeled)
  • Persian cucumber, 1 (peeled and sliced into 1/4-inch rounds)
  • Freshly ground black pepper
  • Crème fraîche (or yogurt), 2 tablespoons (optional)
