Chick Peas & Chorizo

- 1/4 c. olive oil
- 1/2 finely diced onion
- 1-2 cloves garlic, minced
- 8 oz. Spanish style chorizo, casing removed and diced into 1/2" cubes
- 2 cans garbanzo beans, drained, rinsed and dried thoroughly with paper towels
- 1 Tbsp. Sherry vinegar
- 1 bag baby spinach (6 oz., washed)
- 1 c. fresh bread crumbs, on the chunky side, not too fine
- Fresh pepper
Avocado Toasts w/Heirloom Tomatoes

1. To a small bowl, add the: Sliced red onion Red wine vinegar Set aside to macerate for 5 minutes 2
- Red onion, 1/4 medium (thinly sliced)
- Red wine vinegar, 1/2 cup
- Ripe heirloom tomatoes, 2 medium (cored and cut into bite-size pieces)
- Cherry or grape tomatoes, 3/4 cup (preferably Sungold tomatoes; halved)
- Mixed herbs (such as basil, cilantro and mint), 1 cup (roughly torn)
- Sea salt, 1 teaspoon, plus extra for serving
- Extra-virgin olive oil, 1/2 cup plus 2 tablespoons
- Good quality day-old bread, 2 thick slices
- Garlic clove, 1 (peeled and halved)
- Ripe Hass avocado, 1/2 (pitted, quartered lengthwise and peeled)
- Persian cucumber, 1 (peeled and sliced into 1/4-inch rounds)
- Freshly ground black pepper
- Crème fraîche (or yogurt), 2 tablespoons (optional)

- 1/4 cup unsweetened natural cocoa powder
- 1/2 cup packed light brown sugar

Combine garlic, shrimp, orange juice, oil, chili paste, paprika, and pepper in a medium bowl

- 1 whole head garlic, split into cloves, cloves left unpeeled
- 24 whole habanero chilies (about 6 ounces; 170g) (see note above)
- 2 tablespoons juice from 1 grapefruit (1 ounce; 30ml) (see note above)
- 2 tablespoons juice from 1 orange (1 ounce; 30ml) (see note above)
