Parmesan Spinach Casserole

- 3 lbs. fresh spinach or 3 10-oz. packages frozen
- 6 Tbsp. grated Parmesan
- 6 Tbsp. minced onion
- 6 Tbsp. heavy whipping cream
- 5 Tbsp. butter, melted
- 1 tsp. salt
- 1/8 tsp. pepper (I use more)
- 1/2 c. buttered farfel (see directions for this - I actually use more than 1/2 c. farfel, too)

- For the dough:
- Filling
- 1 Tbsp. veggie or sunflower oil
- 1/2 med. onion, finely chopped
- 12 oz ground pork
- 3 garlic cloves, finely chopped
- 1 red or jalapeño chili, seeded & finely chopped
- 1/2 tsp. ground cumin
- 1/4 tsp. ground cinnamon
- pinch of ground cloves
- 1/2 c. tomato juice
