- 1 lb of white beans—Cannellini or Great Northern—about 2 1/2 cups
- 2 quarts of water
- 2-3 lbs of smoked ham hocks or shanks
- 2 teaspoons Herbes de Provence, or Italian seasoning
- 1 Tbsp olive oil
- 1 cup of diced onions (about 1 small onion)
- 1 cup chopped celery (about 2-3 ribs)
- 2/3 cup chopped carrots (about 1 medium carrot)
- 2-3 cloves garlic, minced
- Tabasco sauce
- Salt and pepper

- 1 med. leek white and pale green parts halved and sliced (1 cup)-OR chives are fine too
- 1/2 cup diced tomato, or red/green pepper
- 1 1/2 cups quinoa, rinsed and drained
- good pinch of salt
- a few grinds of seasoning salt
- 2 cloves garlic, minced
- 2 large eggs
- 1 cup soy milk, non-fat milk, or milk of choice
- 1 1/2 cups grated Cheddar cheese, more for sprinkling

Green Salsa Recipe
- 5-6 medium size tomatillos (peeled and boiled for 10 mins)
- 3 jalapenos (more or less if you want, just depends on how spicy you want them – 3 makes it pretty spicy)
- Parsley (probably about a cup or two, I eyeballed it)
- 3 garlic cloves
- Green Onions (3 or 4 stalks)
- Lime juice (1 lime)
- Salt/Pepper to taste

- 2 (16 oz) pkg frozen whole-kernel corn, divided
- 2 tsp sugar, divided
- 1/4 cup canola mayo
- 2 tbsp fresh lime juice
- 1 1/2 tsp ancho chile powder
- 1/2 tsp ground coriander
- 3/4 tsp kosher salt
- 2 oz cotija cheese, grated (about 1/2 cup)
