- 1 avocado peeled, pitted and diced
- 4 med tomatoes diced
- 1 jalepeno pepper seeded and minced
- 1/2 cup chopped fresh cilantro
- 3 cloves garlic
- lime juice
- 3 TBS olive oil (opt)
My meatballs

- 1 lb ground chuck beef
- 1 to 2 eggs
- 2-3 pcs of crumbled bread (or bread crumbs)
- 4 shakes of salt
- 10 shakes of pepper
- few shakes onion powder
- 1-1/2 TBS oregano
- 1 garlic clove
- parsley
- few shakes seasoning salt
- 1/4 cup fresh parm
- 1-2 spoonfuls campbells cream of chicken soup for baking (opt)
Chocolate Eclair Cake

- 1 box graham crackers
- 2 pkgs instant french vanilla pudding
- 1 large container cool whip
- FROSTING
- 1 cup sugar
- 1 cup brown sugar
- 1/2 cup milk
- 1/2 cup butter
- 1 cup semi sweet choco chips
Broccoli Cheese Casserole

Casserole
- 2 - 10 oz packages of frozen broccoli or bag of florets or spears
- 1 egg
- 1/2 cup mayo
- 1 can cream of mushroom (or celery) soup
- 1 cup grated cheddar
Chicken Soup

With bonelss skinless breasts
- 6 cups of water
- 9 chicken bouillon cubes
- 2 slices of onion chopped
- 2 garlic cloves chopped
- 9 or so pieces of peppercorn
- Boil and simmer the above
- 1-1/2 lbs boneless skinless chicken breasts
- 1 cup corn (frozen or canned)
- 1 cup peas (frozen or canned)
- 1 large baking potato skinned and chopped
- 1 cup egg noodles uncooked
Bon's Old Fashioned Sugar Cookies

- 1 cup powder sugar
- 1 tsp vanilla
- 2 eggs
- 1 tsp baking soda
- 5 cups flour
- 1 tsp cream of tarter

Breakfast Strata

Breakfast (make the night before serving)
- 6 slices french bread (1 mini loaf), cut into 1" cubes
- 1/2 TBS olive oil
- 1/2 lb ground breakfast sausage (i use pork sausage)
- 8 eggs
- 3 cups milk
- 1/2 bag frozen green beans cut and cooked
- salt & freshly ground pepper to taste
- 2-1/2 cups grated cheddar cheese
Spinach Artichoke Dip (hot)

- 8 oz package cream cheese
- 1/4 c mayo
- 1/4 c grated parm (I freshly grate)
- 1/4 c romano (freshly grate)
- 1 garlic clove peeled and minced (i use a couple cloves)
- 1/2 tsp dried basil (opt) (i do not use)
- 1/4 tsp garlic salt
- salt and pepper to taste (approx 1/8 tsp pepper and 1/4 tsp salt)
- 14 oz can of artichoke hearts drained and chopped (med hearts)
- 10 oz box frozen spinach thawed and drained
- 1/4 c shredded mozz cheese (freshly grated stella mozz is good!)
