Shrimp Gumbo

Warm up friends and family with a delicious cup of Shrimp Gumbo
- 1-1/2 cups melted butter
- 1-1/2 cups all-purpose flour
- 2 cups chopped onions, cut into 3/8" pieces
- 1 cup chopped green peppers, cut into 3/8" pieces
- 1 cup chopped celery, cut into 3/8" pieces
- 1 lb. Andouille sausage, cut into 1/2" pieces
- 1/2 lb. Tasso smoked meat, cut into 1/2" pieces
- 1 tbsp. paprika
- 3 tbsp. "Emeril's Bayou Blast" seasoning
- 2 tsp. gumbo file, ground
- 1 tsp. ground Ancho pepper (optional for extra heat)
- 10 cups cold chicken stock or broth
- 2 tbsp. brown sugar
- 2 bay leaves
- 1/2 lb. shrimp, cleaned and peeled with tails removed
- Salt and Pepper to taste
Carrabbas Spicy Sicillian Chicken Soup

I loved this soup when I tried it at Carrabbas
- olive oil
- 3 medium sweet onions
- 2 1/2 medium green peppers
- 10 hearts celery (I estimated 8 whole stalks, but only had hearts)
- 8 -10 medium carrots (6 large would be enough)
- 8 medium sized potatoes (maybe just 4-5 larger Idaho baking potatoes?)
- 10 -12 garlic cloves
- 4 quarts chicken stock (2 from boxed broth, 2 from concentrate)
- 5 boneless skinless chicken breasts
- 2 (28 ounce) cans tomatoes, 28 oz can and (I used "Generic" Safeway Diced Petite, (1, 1)
- 1 cup of chopped parsley
- white pepper (2 tablespoons total?)
- black pepper (1.5 or 2 tablespoons?)
- salt (1.5 tablespoon?, and then salted to taste at end)
- 2 lbs ditalini, as needed when serving (or stubby pasta of choice)

Herb Rubbed Sirloin Tip Roast

Intensely flavored sirloin tip roast using a homemade herb rub paste that is certain to please the entire family
- 1 1/4 tablespoons paprika
- 1 tablespoon kosher salt
- 1 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground cayenne pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 2 tablespoons olive oil
- 1 (3 pound) sirloin tip roast
- AU JUS
- 2 tsp olive oil
- 1 1/2 cups dry red wine
- 1 can (10.5oz) Beef broth
- 1 Shallot chopped or 2 green onions
- 1 clove (1 tsp) Minced garlic
- 3 tbsp Flour
- 1/4 tsp Thyme
- Salt and pepper to taste

- 1 1/2 pounds baby spinach leaves
- 2 tablespoons good olive oil
- 2 tablespoons chopped garlic (6 cloves)
- 2 teaspoons kosher salt
- 3/4 teaspoon freshly ground black pepper
- 1 tablespoon unsalted butter
- Lemon
- Sea or kosher salt, optional

- 1 cup sour cream

Broiled Tomatoes with Parmesan cheese

- 4 large tomatoes
- 1 cup fresh bread crumbs
- 1/4 cup melted butter
- 2 tablespoons grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
Crescent Roll Breakfast casserole

This marinade was advertised as "The best steak marinade in existence
- 1/3cup1/3 cup soy sauce
- 1/2cup1/2 cup olive oil
- 1/3cup1/3 cup fresh lemon juice
- 1/4cup1/4 cup Worcestershire sauce
- 1 1/2tablespoons1 1/2 tablespoons garlic powder
- 3tablespoons3 tablespoons dried basil
- 1 1/2tablespoons1 1/2 tablespoons dried parsley flakes
- 1teaspoon1 teaspoon ground white pepper
- 1/4teaspoon1/4 teaspoon hot pepper sauce (optional)
- 1teaspoon1 teaspoon dried minced garlic (optional)
Texas Trash Warm Bean Dip

Preheat oven to 350 degrees
- 1 (8 ounce) package cream cheese, softened
- 1 cup sour cream
- 2 cans (16 ounces, each) refried beans
- 1 packet taco seasoning
- 2 cups cheddar cheese, shredded
- 2 cups monterey jack cheese, shredded
Tandoori Chicken

This was on the food network show, "The best thing I ever made"
- 5 cloves
- 2 dried guajillo chiles (if you can't find these, then use 2 chiles de arbol, and more paprika for color)
- 2 green cardamom, husks discarded, seeds retained
- 1 black cardamom, husk discarded, seeds retained
- 1 teaspoon coriander seeds
- 1/2 teaspoon fennel seeds
- 1/2 teaspoon fenugreek seeds
- 1 cup whole fat plain yogurt
- 1/4 cup peanut or canola oil
- 2 tablespoons malt vinegar or lime juice
- 1 teaspoon kosher salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon paprika
- 1/4 teaspoon ground turmeric
- Pinch cayenne pepper
- 8 cloves garlic, minced
- 2-inch thumb ginger, peeled and minced
- 1 packet boneless skinless chicken thighs (1 1/2 pounds usually)
- 1 teaspoon honey
- Salt and freshly ground black pepper
- Couple of extra limes, for garnish
