Thai Chicken Peanut Noodles

In a small bowl, whisk the first six ingredients until blended
- 1/4 c creamy peanut butter
- 1/2 c chicken broth
- 1/4 c lemon juice
- 1/4 c soy sauce
- 4 tsp sriracha Asian hot chili sauce
- 1/4 tsp crushed red pepper flakes
- 12 oz uncooked spaghetti
- 1 lb lean ground chicken
- 1-1/2 c julienned carrots
- 1 medium sweet red pepper, chopped
- 1 garlic clove, minced
- 1/2 c finely chopped peanutes
- 4 green onions, chopped
Greek Frittata

Preheat oven to 400º. In a large skillet, heat olive oil over medium-high heat
- 2 Tbsp olive oil
- 1 (28 oz) pkg frozen hash brown potatoes with onions and peppers, thawed
- 1 (9 oz) bag fresh spinach, stemmed
- 1 tsp salt, divided
- 2 plum tomatoes, thinly sliced
- 1 (4 oz) container crumbled feta cheese
- 12 large eggs
- 1/2 c milk
- 1/2 dried oregano
- 1/2 tsp ground black pepper
Sage-Chive Steaks with Arugula Salad

In a bowl, combine the EVOO, garlic, chives and sage
- 1/3 cup extra-virgin olive oil (EVOO), plus more for drizzling
- 4 cloves garlic, smashed and grated
- 3 - 4 tablespoons snipped or chopped fresh chives
- 12 sage leaves, finely chopped
- 4 3/4 - to 1-inch-thick sirloin or shell steaks, patted dry
- Salt and freshly ground pepper
- 8 ounces gorgonzola, preferably mountain, or herbed goat cheese, sliced (about 1 cup)
- 1 5 ounce package about 6 cups) arugula or baby arugula
- 2 vine-ripened tomatoes, thinly sliced
- Juice of 1 lemon
- Crusty bread, to pass around the table
Greek Salad with Beef Kebabs

In a small bowl, whisk the EVOO, vinegar, garlic and oregano; season with salt and pepper
- 1/4 c EVOO
- 2-1/2 Tbsp red wine vinegar
- 2 cloves garlic, grated
- 1 tsp dried oregano
- Salt and pepper
- 1 lb well-trimmed beef sirloin, cut into 16 cubes
- 5 oz cherry tomatoes, quartered
- 1 english cucumber, sliced
- 1/2 small sweet onion, thinly sliced
- 16 pitted kalamata olives, halved
- 5 oz baby spinach (about 6 cups)
- Add feta cheese, if desired
Mom's Pancetta-Wrapped Shrimp with Sage and Fennel and Celery Salad

Preheat an outdoor grill or indoor grill pan or griddle to medium
- 1 large bulb fennel, very thinly sliced, with a few fronds reserved for garnish
- 6 ribs celery with leafy tops, very thinly sliced on an angle
- 1 bunch scallions, very thinly sliced on an angle
- 2 lemons, juiced
- EVOO, for liberal drizzling
- Salt and pepper
- 3 - 4 tablespoons capers, drained
- 16 - 20 large shrimp, peeled (tails left on) and deveined
- 16 - 20 large sage leaves
- 16 - 20 thin slices pancetta

In a large pitcher, combine water, syrup, lemonade concentrate, and drink mix, whisking to combine
- 8 c water
- 1 (12 oz) jar strawberry syrup
- 1 (12 oz) can frozen lemonade concentrate, thawed
- 3/4 c pink-lemonade-flavored drink mix
- 1 (2 liter) bottle cold lemon-lime-flavored carbonated beverage
- 1 qt strawberries, frozen
- Garnish: fresh strawberries
Crinkled Fudge Truffle Cookies

- 3 4-oz bars sweet baking chocolate, chopped
- 2 Tbsp butter-flavored shortening
- 1 tsp instant coffee granules
- 3 eggs

- 1 tsp vanilla
- 1 c chopped pecans
- 6 Tbsp all-purpose flour
- 1 tsp ground cinnamon
- 1/2 tsp baking powder

- 1 c chopped celery
- 1 c chopped carrots

- 2/3 c all-purpose flour
- 4 c chicken broth
- 1/2 c heavy whipping cream
- 4 c chopped cooked chicken
- 1 Tbsp minced fresh thyme
- 1-1/2 tsp salt
- 1 tsp ground black pepper
- 2 (7.5 oz) bags complete buttermilk biscuit mix (Bisquick)
- 1 c shredded Parmesan cheese
- 1 c whole milk
