- 1/2 lb thinly sliced prosciutto
- 1 Tbsp each of chopped thyme and rosemary
- 1-1/2 tsp chopped sage
- 1/2 c panko bread crumbs, crushed
- 1 c freshly grated Parmigiano-Reggiano cheese
- 1/4 c extra-virgin olive oil
- Salt and freshly ground black pepper
- one 4- to 4-1/2 lb trimmed and tied beef tenderloin roast
- 4 Tbsp unsalted butter
- 2 shallots, minced
- 3/4 c ruby port
- 1 c beef demiglace
Grilled Shrimp and Cuban Corn

Preheat the grill to medium-high
- 8 ears corn, husked
- 1/2 cup extra-virgin olive oi
- lSalt and black pepper
- 3 cloves garlic, finely chopped
- 1 tablespoon paprika

- 2 pounds large shrimp, peeled and deveined
