Steak and Mushroom Stroganoff

Trim the steak of any surface fat
- 1-1/2 pounds sirloin beef steak
- salt and pepper
- 3/4 pound wide egg noodles
- 2 tablespoons canola oil plus more if needed
- 1 pound button or cremini mushrooms
- 3 tablespoons unsalted butter
- 1/3 cup minced shallots
- 1-1/2 cups sour cream
- 1-1/4 teaspoons dried dill
California quinoa salad

Makes 10 to 12 servings
- Salad
- 2 cups quinoa (see note)
- 2 2/3 cups water
- 2 cups diced fresh plums
- 3/4 cup chopped dried plums (prunes)
- 1 cup thinly sliced celery
- 1 cup chopped, toasted walnuts
- 2/3 cup minced red onion
- 2 tbsp. chopped fresh basil
- Dressing
- 2/3 cup extra virgin olive oil
- 1/2 cup white wine vinegar
- 2 tbsp. honey
- 1 tsp. salt, or to taste
- Freshly ground pepper, to taste
Honey-Citrus Marinated Asparagus

Blanch or steam asparagus until crisp-tender, about 2 minutes
- 2 pounds asparagus, trimmed
- 1 orange, zested and juiced
- 1/2 cup champagne vinegar
- 1/2 cup honey
- 1/4 cup California Olive Ranch extra virgin olive oil
- Salt and freshly ground black pepper to taste
- 1 navel orange cut into segments
- 1/2 small red onion, thinly sliced
PTM - Chicken with Tamarind, Apricots and Chipotle Sauce

Thoroughly rinse chicken pieces with cold water and pat dry
- 4 chicken quarters, or 8 chicken pieces of your choice with skin and bones
- 1 tsp kosher or sea salt, or to taste
- 1/2 tsp freshly ground black pepper, or to taste
- 1/2 cup vegetable oil
- 4 cups water
- 1/2 lb, about 3/4 cup, dried apricots, roughly chopped
- 2 tbsp apricot preserve
- 3/4 cup tamarind concentrate, store bought or homemade (recipe follows)
- 2 tbsp sauce from chipotles in adobo, or more to taste
Black Bean and Rice Salad

- 2 --15 oz. cans of black beans, drained and rinsed
- 12 oz. frozen corn
- 2 cups cooked brown basmati rice
- 8 oz. cherry tomatoes, sliced in half
- 1/2 cup chopped cilantro
- 3/4 cup chopped red onion
- 6 oz. crumbled feta cheese
- 1/4 cup extra-virgin olive oil
- 1/4 cup balsamic vinegar
- salt and pepper to taste

- 1/3 cup brown sugar
- 1 teaspoon ground cinnamon
- 2/3 cup white sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 1/2 teaspoons vanilla extract

- 1 3/4 teaspoons baking powder
- 1/2 cup milk
- 1 apple, peeled and chopped

Brussels Sprouts Lardons

Heat the olive oil in a large (12-inch) saute pan and add the pancetta
- 2 tablespoons good olive oil
- 6 ounces Italian pancetta or bacon, 1/4-inch dice
- 1 1/2 pounds Brussels sprouts (2 containers), trimmed and cut in 1/2
- 3/4 teaspoon kosher salt
- 3/4 teaspoon freshly ground black pepper
- 3/4 cup golden raisins
- 1 3/4 cups Homemade Chicken Stock, recipe follows, or canned broth
Taco Salad Recipe

- 2 lbs ground beef
- 2 packages of taco seasoning mix
- 2 cups shredded cheddar cheese
- 1 red onion
- 1 yellow onion
- 2 heads lettuce (chopped)
- 4 tomatoes (diced)
- 2 avocado’s (peeled and chopped)
- 1 1/2 cups block olives (sliced)
- 1 bag nacho chips
- 1 bottle Catalina salad dressing
