Homemade Sriracha

Yield: 1-1/2 cups
- ■1 1/2 lbs of jalalpeños and red serranos, stems snipped off, leaving green tops intact:
- — 3/4 lb should be 100% red
- — around 1/2 lb or a little less should be partially green/partially red
- — the remaining 1/4+ should be completely green)
- (Adjust the ratio based on how spicy you’d like the final product to be. I did a 1:1 ratio, and it was quite a bit hotter than Huy Fong’s. The more serranos you use, the spicier the sauce will be.)
- ■6 cloves of garlic, peeled
- ■8 tbsp dark brown sugar
- ■1 1/2 tsp Kosher salt
- ■1 1/2 tsp smoked sea salt
- ■1/2 cup of distilled white vinegar
Tomato-Curry Lentil Stew

Combine lentils and water, bring to a boil
- 1/2 cup dry lentils
- 1 cup water
- 5 ounces stewed tomatoes
- 1/8 cup chopped onion
- 2 stalks celery, chopped, with leaves
- 1/4 teaspoon curry powder
- 3 cloves garlic, minced
- salt to taste
- ground black pepper to taste
Oatmeal Cake

This is the cake grandma used to make for Heather's restaurant
- Ingredients:
- 1 1/2 cups flour
- 1 cup brown sugar
- 1 cup white sugar
- 1/2 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- Mix and combine with the oatmeal mix.
- Oatmeal mix:
- 1 stick margarine
- 1 cup oatmeal
- 1 1/4 cup boiling water
- Pour mixture in a greased 13/10 inch pan. Bake at 350 for 35 minutes.
- Topping - in sauce pan:
- 1/2 cup white sugar
- 2 oz evaporated milk
- 6 oz margarine (stick)
- 1 cup coconut
- 1 cup pecans, chopped
- 1/2 teaspoon vanilla
- Mix. Bring to boil. Spread over cooled cake. Brown in broiler watching carefully.
Classic Meatloaf

Many meatloaf recipes call for ground veal or pork in addition to ground beef
- 1 cup of finely chopped onion
- 1 celery rib, chopped fine
- 1 Tbsp minced garlic
- 1 carrot, chopped fine
- 1/2 cup of finely chopped scallions (can substitute onion)
- 2 Tbsp unsalted butter
- 2 teaspoon salt (use 1 1/2 teaspoons if using Italian sausage)
- 1 1/2 tsp freshly ground pepper
- 2 tsp Worcestershire sauce
- 2/3 cup ketchup
- 1 1/2 pounds of ground chuck
- 3/4 pound of spicy ground pork sausage or Italian sausage (a mix of sweet and hot if you are using links)
- 1 cup fresh bread crumbs
- 2 large eggs, beaten slightly
- 1/3 cup minced fresh parsley leaves
Warm Steak House Salad with Blue Cheese Dressing

Cook’s Notes For many recipes what kind of potato you use makes a huge difference
- 1 pound russet Potatoes (2 medium)
- 5 T extra virgin olive oil
- Kosher salt and freshly ground black pepper
- One 1 1/4 to 1 1/2 pound beef sirloin steak (about 1 1/2 inches thick)
- 1 large onion
- Blue Cheese Dressing (recipe follows) or store bought dressing
- 5 oz baby spinach (about 8 cups packed)

Preheat the oven to 325 F
- tomatoes - 6 large heirloom
- ground beef - 1/2 pound, lean
- white rice - 1/2 cup, medium grain
- garlic cloves - 3, pressed
- onion - 1/2, finely diced
- parsley - 1/3 cup, chopped
- basil - 1/4 cup, chopped
- asiago cheese - 1/2 cup, shredded
- salt and pepper - to taste
- olive oil - 5 tbsp
Falafel Salad with Creamy Garlic Dressing

An ice cream scoop, and they come in many sizes, does double duty as a tool for measuring dry ingredients
- Ingredients for Salad:
- 1 c cherry tomatoes
- 3 pickled cherry peppers
- 1/2 seedless(English) cucumber
- 1 small head iceberg lettuce
- 1 small onion
- 5 T extra virgin olive oil
- 2 garlic cloves
- 3/4 t ground cumin
- 1/2 t ground coriander
- 1/4 t cayenne pepper
- One 15 1/2 oz can chickpeas
- 1 large egg
- 2 T well-stirred tahini
- 1/2 t kosher salt
- 1 recipe Creamy Garlic Dressing Two Ways
- 3/4 cup panko bread crumbs
- Creamy Garlic Dressing Two Ways: Rich and Slim
- Makes about 2/3 cup
- 2 T sherry vinegar
- 2 t Dijon mustard
- 1/4 t kosher salt
- 1/8 t freshly ground black pepper
- 1 garlic clove
- 1/4 c heavy cream or plain low-fat or full-fat yogurt Greek-style
- yogurt
- 1/4 c extra virgin olive oil
- Whisk together the vinegar, mustard, salt, and pepper in a small bowl until the salt has dissolved. Press the garlic (about 1 teaspoon) into the mixture. Gradually whisk in the cream and then the olive oil. Store in the refrigerator for a day or two.
Corn Soup

To a large saucepan or Dutch oven on medium heat, add the olive oil and onion
- 2 tablespoons olive oil
- 1 onion, finely diced
- Salt and Freshly ground pepper
- 1 lb bag frozen corn
- 8 cups low sodium chicken stock
- 1 teaspoon cumin
- 6 whole wheat tortillas
- Salsa, for garnish
New Potato Salad

Place the potatoes and 2 tablespoons of salt in a large pot of water
- 3 pounds small red potatoes
- Kosher salt
- 1 cup good mayonnaise
- 1/4 cup buttermilk, milk, or white wine
- 2 tablespoons Dijon mustard
- 2 tablespoons whole-grain mustard
- 1/2 cup chopped fresh dill
- Freshly ground black pepper
- 1/2 cup chopped celery
- 1/2 cup chopped red onion
Stovetop Popcorn

Heat oil and grease in a pan over medium heat
- ■1 tbsp bacon grease
- ■1 tbsp + 1 tsp sesame oil*
- ■a little less than 1/2 cup of popcorn kernels
- ■salt and pepper, to taste
