I decided to try a different type of summer dish- shrimp ceviche
- 2 lbs cooked shrimp (peeled, deveined with tails off)
- 3/4 cup fresh lime juice
- 3 roma tomatoes (diced)
- 1 white onion (chopped)
- 1/2 cup fresh cilantro (chopped)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ketchup
- 1 teaspoon hot pepper sauce
- salt and pepper (to taste)
- 1 avocado (peeled, pitted and diced)

Beef Stew

Melt fat in saucepan and brown meat
- 2 pounds of stew beef
- 2 tablespoons fat
- 1 clove garlic, minced
- 1 bay leaf
- 6 onions
- 1 c green peas (optional)
- 6 carrots
- 6 potatoes. diced
- 1/2 teaspoon Gravy Master
- 1 tablespoon salt
- 1 teaspoon fresh ground pepper
Dr. Fuhrman's Waldorf Blended Salad (Smoothie)

Place all ingredients into a high powered blender and blend until smooth
- 1/2 cup pomegranate juice
- 1 apple, peeled and cored (I left the skin on)
- 1/4 cup walnuts
- 3 cups compacted collard greens and/or kale

Black Bean and Vegetable Soup

1. Heat oil in large pot. Add onions and sauté until translucent, about 5 minutes
- 1 medium onion, chopped
- 1 tbsp olive oil
- 1 tbsp ground cumin
- 1/2 tbsp curry powder
- 1 carrot, sliced
- 1 celery stalk, sliced
- 1 medium potato, peeled and cubed
- 1 parsnip, peeled and sliced
- 6 mushrooms, sliced
- 6 cups chicken or vegetable stock
- 1 can black beans
- Salt and pepper to taste
- Cilantro for garnish

Lemon Caper Sauce

1. Melt butter in the skillet over low heat
- ■2 tablespoons unsalted butter
- ■1-1/2 teaspoon all-purpose white flour
- ■1/2 cup reduced sodium chicken broth
- ■1/4 cup white wine
- ■2 tablespoons lemon juice
- ■1 teaspoon capers
- ■1/4 teaspoon white or black pepper
Red Lentil Soup with Cauliflower and Indian Spice

Take frozen cauliflower out of freezer and leave on counter to partially defrost
- 2 2 2 cups red or orange lentils
- 6 6 6 cups water
- 3 3 3 plum tomatoes
- 2 2 2 cups yellow onion, finely chopped
- 6 6 6 Tbsp low sodium vegetable broth
- 1 1 1 tsp white or black sesame seed
- 2 2 2 tsp cumin seed
- 1 1 1 tsp fennel seed
- 2 2 2 tsp brown or yellow mustard seeds
- 2 2 2 bay leaves
- 2 2 2 tsp turmeric
- 1 1/2 1 1/2 1/2 cups unsweetened almond milk
- 1 1/2 1 1/2 1/2 tsp coconut extract
- 1 1 1 lime, juiced
- 1 14 1 14 1 14 ounce bag frozen cauliflower
- Optional: a dash or two of cayenne pepper (I used two)
- 1 (I added 1 tsp more for the whole pot) or salt free seasoning
- Chopped cilantro, for garnish
