Pecan Brittle

Mix all ingredients except soda and cook on medium heat until hard crack stage on candy thermometer
- 2 cups nuts
- 1 cup sugar
- 2 tbsp. water
- 1/2 cup dark corn syrup
- 1 tsp. soda
- 2 tbsp. vinegar
Funnel Cakes

In a large, deep pan, heat the oil to 350 degrees
- 3 cups All-purpose Flour
- 1/4 cups Sugar
- 2 teaspoons Baking Powder
- 1/2 teaspoons Salt
- 3 whole Eggs
- 1/2 teaspoons Vanilla Extract
- 2-1/4 cups Milk
- Powdered Sugar (for Dusting)
- Canola Oil, For Frying
Chocolate Layers - Old Fashioned #

Preheat oven to 350 degrees with rack in the center
- 3 cups all-purpose flour
- 2 cups sugar
- 1/2 cup unsweetened cocoa powder
- 2 tsp. baking soda
- 1 tso. table salt
- 2 cups hot water
- 3/4 cup vegetable oil
- 2 tbs. white vinegar
- 1 tbsp. coffee granules
- 1 tbsp. vanilla extract
Marshmallow Cream Cheese Frosting

In the bowl of an electric mixer, beat cream cheese, marshmallow creme and vanilla extract until well blended
- 1 package Reduced Fat Or Regular Cream Cheese, Softened (8 Ounces)
- 1 jar Kraft Marshmallow Creme (7 Ounces)
- 1 teaspoon Vanilla Extract
Strawberry Pound Cake

Preheat oven to 350 degrees
- 1 18 oz. box strawberry cake mix
- 1 3.4 oz. package instant vanilla pudding mix
- 1/3 cup canola oil
- 1 3 oz. package strawberry gelatin

In the bowl of a standing mixer, cream softened butter and add 4 cups sugar, milk and vanilla
- 2 sticks butter, room temperature
- 8 cups confectioners’ sugar
- 1/2 cup milk
- 2 teaspoons vanilla extract
German Chocolate Pie - #

Mix all ingredients. Bake in pie crust at 400 degrees for 30 to 40 minutes
- 1 cup sugar
- 2 tbsp. flour
- 1 tbsp. cornstarch
- 2 tbsp. cocoa
- 2 eggs
- 3 tbsp butter, melted
- 2/3 cup milk
- 1 tsp. vanilla
- 3/4 cup coconut
- 1/3 cup pecans

Autumn Apple Salad

In a saucepan combine pineapple and sugar
- 1 (20 oz) can crushed pineapple..DO NOT DRAIN
- 2/3 cup sugar
- 1 (3 oz) pkg. lemon jello
- 8 ounces cream cheese...softened
- 1 cup apples..UNPEELED, DICED
- 1 cup celery...chopped
- 1 cup whipped topping
- 1/2 to 1 cup nuts chopped

With a whisk or a mixer, beat cream cheese, milk and lemon juice until smooth
- 1 (8-ounce) package cream cheese
- 1 (14-ounce) can sweetened condensed milk
- 1/2 cup fresh lemon juice
- 24 packaged sweet ready-to-eat mini tart shells
