Baked Shrimp in Tomato Feta Sauce

1. Preheat oven to 425 degrees
- 1 Tbsp Olive Oil
- 1 Medium Onion, chopped
- 2 cloves of garlic, minced.
- 2 14.5oz cans of diced tomatoes
- 1/4 Cup minced fresh parsley
- 1 Tbsp minced fresh dill or 1 teaspoon dried dill
- 1 to 1/4 LB medium sized raw shrimp, peeled and deveined, thawed
- Pinch of Salt, or to taste - same with the pepper.
- 3 ounces Feta Cheese (about 2/3 Cup, crumbled)
Chicken and Cremini Mushroom - Port Sauce

For Weight Watchers this is a savory chicken/mushroom treat - about 6 points plus
- 4 (5) oz skinless boneless chicken breast halves
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tsp Olive Oil
- 1 10 oz package of sliced cremini mushrooms
- 1/3 cup ruby port wine
- 1/3 cup reduced-sodium chicken broth
- 2 tsp all-purpose flour
- 2 garlic cloves, minced
- 1/2 tsp dried thyme
