Citrus Pork with Egg Noodles

- 1 tsp ground cumin
- 1/2 tsp salt
- 1/2 tsp freshly ground pepper
- 1/2 Pound boneless pork loin, cut into
- 2 X1/2 inch strips
- 1 Tbsp vegetable oil
- 2 Cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup Orange Juice
- 2 Tbsp Cider Vinegar
- 1/2 Tbps Brown Sugar
- 2 medium carrots, sliced
- 1 Tbps Corn Starch
- 1/2 Cup sliced green onions
- 1/2 pound egg noodles, cooked, drained
Flank Steak with Olive-Mint Sauce

Chopped Green Olives with fresh Mint/dried Tomatoes on Flank Steak
- 1 (1 pound) Flank Steak - trimmed
- 1/8 tsp Salt
- 1/4 tsp black pepper
- 1/2 cup reduced-sodium beef broth
- 2 Tbsp finely chopped Green Olives
- 2 Tbsp finely chopped dry-packed sun-dried tomatoes
- 2 Tbsp chopped fresh mint
Roasted New Potatoes

- 1 1/2 pound of new potatoes (red or yellow skinned), cleaned cut in half or quarters
- 2 Tsbp olive oil
- 2 cloves garlic, minced
- 1-2 tsp fresh rosemary
- 1/4 tsp salt
- pepper to taste
Pork Chops with Dijon Sauce

- 1 Tbsp Olive Oil
- 4 center cut rib or pork loin, boneless chops, about 1 1/4 inch thick.
- Salt and freshly ground black pepper
- 1/4 Cup chopped shallots or green onions
- 1 Cup dry White Wine
- 3/4 Cup chicken stock
- 3/4 Cup Heavy Cream
- 2 Tbsp Dijon Mustard
- 1 Tbsp chopped Parsley (optional)
Mixed Baby Greens with Strawberries and Kiwi

- 16 oz container of strawberries, hulled
- 1 small shallot, chopped
- 2 Tbsp balsamic vinegar
- 1 Tbsp Orange Juice
- 2 tsp extra-virgin olive oil
- 1 tsp honey
- 1/2 tsp salt
- 1 (5 oz) container of mixed baby greens
- 2 kiwis, peeled an dcut into 1/2 inch pieces
- 1/4 cup loosely packed mint leaves.
Grilled Beef and Mushroom Burger

- 1 Pound ground Beef
- 1-ounce package A 1-ounce package of dried mushrooms (Shiitake is best)(porcini, morels)
- 2 tsp Worcestershire sauce
- 1/2 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 1/2 pound fresh shiitake mushrooms
- 1 large onion, cliced thin
- 2 Tbps Olive Oil
- Salt
- 4-6 Slices of Swiss Cheese

- 4 sweet onion slices

Tex-Mex Beef and Vegetable Salad

- 3/4 lbs of lean ground beef (7% fat or less)
- 2 Tsp chili powder
- 1/2 Tsp of salt
- 1/2 head romaine lettuce, thinly sliced
- 2 large tomatoes, cut into 1/4 in. dice
- 1 (15 oz) can black beans, rinsed and drained.
- 1 large Granny Smith apple, cored and cut into matchsticks
- 1 red onion, cut in 1/4 inch dice
- 1 1/4 cups prepared fat-free salsa
- 1/2 cup fat-free sour cream
- 1/4 cup lightly packed fresh cilantro leaves (optional)

- 1 1/2 pounds whole small button mushrooms, wiped clean
