Pork Chops with Corn-Bell Pepper Relish

Flavorful, colorful pork and veggie mix
- 2 cups fresh or frozen corn kernels
- 1 small red bell pepper, chopped (dice)
- 2 small scallions, chopped
- 2 Tbsp honey
- 2 Tbsp white vinegar
- 3/4 tsp salt
- 1/4 tsp black pepper
- Pinch cayenne
- 4 (1/4 pound) thin-cut boneless pork loin chops, trimmed
- 2 tsp olive oil
Double Cheese and Macaroni

- 3/4 cup shredded reduced-fat Monterey Jack cheese
- 3/4 cup shredded reduced-fat cheddar cheese

Beef Stroganoff

- 6 Tbps Butter
- 1 Pound of top sirloin or tenderloin, cut into 1-inch long strips
- (put beef into freezer for 20-30 minutes to make slicing easier.)
- 1/3 Cup chopped shallots (or onions)
- 1/2 Pound cremini mushrooms, sliced
- Salt and pepper to taste
- 1/8 tsp nutmeg
- 1/2 tsp dry tarragon or 2 tsp of chopped fresh tarragon
- 1 cup of sour cream at room temperature

Chicken Breasts with Mushroom Sage Sauce

You know what the best thing is about boneless, skinless chicken breasts? They cook up in about nothing flat
- 3 Tbsp Butter
- 1/2 Cup Chopped Shallots
- 8-10 oz mushrooms, cremini or shiitake, sliced
- 1 tsp chopped fresh parsley
- 1 cup dry vermouth or dry white wine (SUCH AS SAUVIGNON BLANC)
- 2/3 Cup heavy whipping cream
- 3 Tbsp chopped fresh sage
- 1 Tbsp Olive Oil
- 1 1/4 to 1 1/2 Pounds skinless, boneless chicken breasts, pieces pounded to an even 1/4 or 1/3 inch thickness
- Salt and freshly ground black pepper
Glazed Ham Steak with Summer Fruit Relish

- 1/2 cup chopped onion
- 2 small carrots, chopped
- 1 celery stalk, chopped
- 1/2 Red Bell Pepper, chopped
- 4 cups reduced-sodium chicken broth
- 1 (15oz) can black beans, rinsed and drained
- 1/2 tsp dried oregano
- 1/4 tsp black pepper
- 1 (10oz) package frozen chopped spinach, thawed and squeezed dry
Chicken and Apples in Honey Mustard Sauce

- 1/2 Cup Apple Cider
- 1 1/2 tsp Cornstarch
- Salt and pepper
- 1 Tbsp Honey
- 2 Tbsp Dijon Mustard
- 1/2 Cup Flour, for dredging
- 1 Pound boneless, skinless Chicken Breast
- 2 Tbsp Olive Oil
- 2 small unpeeled apples, (Grannies, or good cooking apples)cored and cut into eighths.
- 1/2 Cup Chicken Broth
- Parsley for garnish
Liver and Onions

- Cup of flour season with:
- 1 1/4 Lb Calves Liver, thinly sliced.
- Salt, Pepper, Paprika and dry mustard to taste.
- 3 tsp of bacon fat. (I prefer butter)
- 2 yellow onions, sliced thin.
Steak with Olive-Mint Sauce

- 1/2 cup reduced-sodium beef broth
- 2 tbps finely chopped green olives
- 2 tbps finely chopped dry-packed sun-dried tomatoes
- 2 tbps chopped fresh mint.
