Chicken breasts stufed with mushrooms

skinless boneless chicken breasts pounded thin and wrapped in a spiral around ground seasoned mushrooms
- 4 Skinless boneless chicken breasts, about 8 ozs each
- Vegetable oil
- 10 Ozs mushrooms, trimmed, cleaned and chopped
- 2 med garlic cloves, minced or pressed
- 1/2 t chopped fresh thyme
- 1 T fresh lemon juice
- 1/2 c dry white wine
- 1 T chopped fresh parsley
- salt and pepper
- 1 c low-sodium chicken broth
- 1 t dijon mustard
- 2 T unsalted butter
Poached pears or apples

Julia Child - vanilla poached pears or apples for use as-is (with creme anglaise or glazed) or in the custard tart
- 1 quart water or 1 pt water and 1 pt dry white wine
- 1.5 c sugar
- 2 lemons
- 2 Tbsp vanilla extract
- 6 firm-ripe unblemished apples or pears (granny smith, golden delicious apples or bosc pears hold shape well)
Chevre Fig butter

- 1 cup chevre (about 8 ozs)
- 1/4 cup butter
- 1/4 - 1/2 cup dried black mission figs

Tomato, corn and cheese galette with cornmeal crust

David Lebovitz delicious and interesting savory summer tart
- 2 T olive oil
- 1 large white onoin
- salt and pepper
- 2 cloves garlic minced
- 1/2 bunch basil, washed, dried, and coarsly chopped (about 1/2 cup) plus 10 whole basil leaves
- Kernels from 1 year of sweet corn (about 1 cup)
- 1 recipe cornmeal galette dough
- 1 large or 2 medium ripe tomatos (about 3/4 pound total) cut into 1/3" slices, drained on paper towels
- 3 oz comte or gruyere cheese, shredded
- 1 large egg holk mixed iwth 1 tsp milk or cream
Oatmeal bread

- 3 cups king arthur unbleached bread flour
- 1 cup old fashioned rolled oats
- 2 T butter
- 1 1/2 t salt
- 3 T brown sugar or honey
- 2 T instant yeast or 1 packet active dry yeast
- 1 1/4 c lukewarm milk
- 3/4 cup raisins or currants (optional)
Marinated grilled vegetables

Vegetables with a balsamic/herb marinade
- 2 Japanese eggplant
- 1 red pepper
- 2 small zucchini
- 4 green onions
- 2 roma tomatos
- 1 C balsamic vinegar
- 1/2 c olive oil
- 3 garlic cloves, miced
- 1 T minced fresh oregano
- pinch of sugar

Pie Crust - super crisp for custard pies

Originally part of pumpkin and yam pie recipe (Cooks Illustrated,Nov 2008, Revisiting Pumpkin Pie)
- 1 1/4 cups (6.25 ozs) unbleached all purpose flour
- 1/2 t salt
- 1 T sugar
- 6 T cold, unsalted butter in 1/4" slices
- 1/4 c cold vegetable shortening, cut into 1" (or so) pieces. (Spectrum vegetable shortening is great.)
- 2 T cold vodka (do not substitute)
- 2 T cold water
Pumpkin Pie with yams - Original

- 1 recipe Pie crust - super crisp for custard pies
- 1 C heavy cream
- 1 C whole milk
- 3 large eggs, plus 2 egg yolks
- 1 t vanilla
- 1 15-oz can pumpkin
- 1 c drained candied yams (from 15 oz can)
- 3/4 c sugar
- 1/4 c maple syrup
- 2 t grated fresh ginger
- 1/2 t cinnamon
- 1/4 t nutmeg
- 1 t salt

- 1/2 cup honey
- 6 - 12 bay leaves
- 1 bunch flat leaf parsley
