Chicken Curry

Heat the butter in a casserole or skillet, add onions and garlic and brown
- 1/2 cup butter or oil
- 4 onions, chopped
- 3 cloves garlic, minced
- 4 bay leaves
- 1 tsp. powdered cinnamon
- 6 whole cloves
- 5-lb chicken, skinned and cut in serving pieces
- 2 med. tomatoes. peeled and quartered
- 1 1/2 tbl. salt
- 3 tbls curry powder
- 1 tbl. paprika
Furrs Famous Millionaire Pie

Cream together powdered sugar and butter on electric mixer
- 2 cups sifted powered sugar
- 1/4 lb margarine or butter, softened
- 2 large whole eggs
- 1/8 tsp salt
- 1/4 tsp Vanilla extract
- 2 Baked 9-inch pie crusts
- 1 cup heavy cream
- 1/2 cup sifted powdered sugar
- 1 cup crushed pineapple, drained
- 1/2 cup chopped pecans
Uncle Dick's Chicken

Brown chicken in oil; pour off excess oil Add enough milk to cover chicken
- Your favorite chicken parts for 4
- Olive oil for browning
- Salt and pepper
- 1 quart milk
Spinach Slad with Sweet Vinaigrette

In small saucepan, cover eggs with water and bring to a boil Remove pan from heat and cover for 10 minutes
- 3 eggs
- 1 Tbl canola or olive oil
- 1 onion, minced
- 3/4 pound chopped uncooked bacon
- 2 tablespoons red wine vinegar
- 1 tbl Dijon mustard
- 1 tbl dark brown sugar
- 1/2 tsp. black pepper
- 1 tbl. salt
- 1 pound fresh baby spinach, washed and chilled
- 1 avocado, diced
- 1/2 lemon, juiced
Pimento Cheese

Mix all together in heavy pot and melt over medium heat
- 1 pound cheddar or American cheese
- 1 large can Carnation milk
- 1 jar pimentoes
- 1 onion
- Dash of salt
- Dash of red pepper
Hush Puppies

In medium bowl, combine cornmeal, flour, baking powder and salt; mix well
- 1 cup yellow cornmeal
- 1/4 cup all-purpose flour
- 1 1/2 tsps baking powder
- 1/2 tsp. salt
- 1 egg beaten
- 3/4 cup milk
- 1 small onion chopped
- Oil for deep-fat frying
Paella

- 1 large green pepper, sliced.
- 2 large tomatoes
- 1 lb. peeled shrimp
- 12 clams
- 3/4 lb. squid
- Cooked chicken
- 1 cup water - 4 cups water
- Mashed garlic clove
- Saffron
- Parsley
- 2 cups rice
- Good squeeze of lemon
- 1/2 pkg. Frozen peas
- 2 tbls salt
- Pimento, artichokes
Cherry Glazed Ham

Heat ham at 325 for time indicated on label
- 1 large ham (5 lbs or more)
- 1 10-oz jar apple or guave jelly
- 1 Tbl. prepared mustard
- 1/3 cup unsweetened pineapple juice
- 1 1lb5oz can cherry pie filling
- 1/2 cup golden raisins
Okra & Tomato Pirlau

1. In deep pot, warm oil, saute bacon until soft but not crisp, about 2 minutes
- 1 tbl olive oil
- 3 ounces bacon, cut into 1/4 inch dice
- 1 cup sweet onion, diced
- 1/2 cup red bell pepper, diced
- 1 garlic glove, chopped fine
- 2 sprigs thyme
- 2 bay leaves
- 14 ounces canned tomatoes, chopped
- 2 1/2 cups water
- Kosher salt
- 2 cups okra sliced to 1/2 inch thick
- 1 cup rice
- black pepper
- Country ham slivers (0ptional)
Chicken Chipotle Cheese Enchiladas

- oil for frying
- cooked, diced chicken
- Chicken bouillon cube (Knorr is best)
- Chipotle bouillon cube (Knorr)or
- teaspoon or two of crushed chipotle pepper

- 3 tbsp. cornstarch
- 1 cup grated cheddar cheese
