Minestrone Soup

1. Heat oil in large stockpot over medium heat
- 2 tbls. olive oil
- 1 medium onion diced
- 2 medium carrots, diced
- 1 celery stalk, diced
- 2 medium zucchini, diced
- 1 garlic cloved, minced
- 3 medium potatoes unpeeled and diced
- 3 cups thinly sliced cabbage
- 1 can cannelini beans, rinsed and drained
- 1 can diced tomatoes undrained
- 2 cans chicken broth
- 1/2 tsp crushed dried rosemary
- 1/2 tsp salt
- 1/2 tsp pepper
- Grated Parmesan cheese
Hash Brown Potato Casserole

Mix cheese, sour cream and soup and pour over potatoes
- 1 bag frozen potatoes
- 1 1/2 cups grated cheese
- 16 oz sour cream
- 1-2 cans Cream of Mushroom soup
- 2 cups corn flakes or crushed crackers
- 1 stick butter
Cream of Zucchini Soup

1. Heat oil and butter in large saucepan
- 2 tbls. olive oil
- 1 tbl. butter
- 1 medium onion roughly chopped (garlic)
- 2 pounds zuccini, trimmed and sliced
- 1 tsp dried oregano
- 2 1/2 about 2 1/2 cups chicken stock
- 4 ounces diced cheese (Fontina)
- 1 1/4 cups light cream
- salt and pepper
- Fresh oregano, extra cheese and cream to garnish
Zyrtles Bars

Grease 8x8 pan with butter
- 1 cup graham cracker crumbs
- 1 cup chocolate chips
- 1 cup grated coconut
- 1 cup chopped nuts
- 1 can condensed milk
- butter
Fruit Pie

Melt butter in 9x9 casserole
- 1 stick butter
- 3/4 cup sugar
- 3/4 cup flour
- 3/4 cup milk
- 2 tsp. baking powder
- Any kind of fresh or canned fruit.
Cherry Fluff

Combine all ingredients in a large bowl
- 1 carton (8 0z) whipped topping
- 1 can (20 oz) crushed pineapple, drained
- 1 can (21 0z) cherry pie filling
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup flaked coconut
- 1/2 cup chopped pecans
Needa's Roast

Brown meat in olive oil. Add chopped onions and garlic, salt and peper, and vinegar and water mixture
- 1 eye round roast 3-5 lbs.
- 1 whole onion chopped
- 3 whole gloves chopper
- 3 tbls. Reging Wine vinegar in glass of water
- salt and pepper to taste
- 1 can Franco American beef gravy.
Impossible Chicken & Broccoli Pie

Heat oven to 400. Grease 10inch pie plate
- 1 package frozen chopped broccoli
- 3 cups shredded cheddar cheese
- 1 1/2 cup cut up cooked chicken
- 2/3 cup chopped onion
- 1 1/3 cups milk
- 3 eggs
- 3/4 cup Bisquick baking mix
- 3/4 tsp salt if desired
- 1/4 tsp pepper
Tomato,Pepper,Bread Frittata

1. Pre-heat oven to 350 F
- 12 large eggs
- 1/3 cup heavy cream
- 1 1/2 cups cubed, day-old bread crusts removed
- 3 tbsp extra-virgin olive oil divided
- 1 onion cut in 1/2 inch strips
- 1 each red and green bell peppers cut in 1/4 inch slices
- 1/2 cup cherry tomatoes cut in half
- 1 tbsp unsalted butter
- 1/2 cup fresh ricotta
Walnut-Stuffed Chicken Breasts

Combine breadcrumbs, half of butter, onion, celery, parsley, walnuts, salt, pepper, and enough water to moisten
- 2 cups toasted breadcrumbs
- 4 tbls. melted butter, divided
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 2 teas. parsley flakes
- 1/2 cup chopped walnuts
- salt and pepper
- 4 small chicken breasts
- Juice of 1/2 lemon
