- 1/3 cup coarse salt
- 1 1/2 teaspoon Turmeric

- 2 Tablespoons mustard seed
- 3 cups Cider Vinegar
Creamy Three-Meat Ragu with Pappardelle & Burrata

Bring a large pot of water to a boil for the pasta
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1/2 pound ground beef
- 1/2 pound ground veal
- 1/2 pound sweet Italian sausage, casings removed
- Salt and finely ground black pepper
- 1 scant teaspoon white pepper
- 1 carrot, peeled and grated or finely chopped
- 1 large shallot, finely chopped
- 2 tablespoons fresh sage, very thinly sliced
- 2 large garlic cloves, chopped
- Finely grated nutmeg, grate it while making one pass over the pan
- 1 tablespoon tomato paste
- 1 cup white wine
- 2 cups passata, or tomato puree
- 1 cup chicken stock
- 1 pound pappardelle, or 500 grams
- 1 cup freshly grated Parmigiano-Reggiano, plus more for topping
- 8 ounces Burrata cheese
- A handful fresh flat-leaf parsley, finely chopped, for topping

- 2 Avocados
- 1/4 cup Cilantro
- 1 English cucumber
- 1 Lemon (about 2 tbsp), Juice of medium
- 1/2 Red onion, medium
- 1 lb Roma tomatoes
- Dressing
- 1/8 tsp Black pepper
- 1 tsp Sea salt

Preheat oven to 350* degrees and grease a 13X9-inch baking pan
- Glaze:
- 2 cans ready to use refrigerated crescent rolls
- 2 8-ounce packages cream cheese
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1 egg white
- 1/2 cup powdered sugar
- 2 Tablespoons milk
- 1/2 teaspoon vanilla extract

In frying pan heat olive oil and 1 Tbsp
- For Top:
- 12 large mushrooms (reserve stems for mixture)
- 1/2 pound 80% ChopMeat (Meatloaf mix can be used)
- 1 or 2 Sausage links. casing removed
- 2 Tbsp. Olive Oil
- 1 Small Onion, chopped (I also added 1 Tbsp of dried onion - it just added a nice taste to it. Do it to your taste)
- 1 Clove Garlic, chopped
- Salt and Pepper to taste
- 1/4 cup Italian Bread Crumbs
- !/4 Cup Reggiano Parmesano Cheese
- 1 egg
