Warm Layered Mexican Dip

In a small bowl, combine the creamed cheese and taco seasoning well with a fork
- 1 can refried beans
- 8 oz softened cream cheese
- 1 pouch taco seasoning
- 1/2 can black beans, rinsed and drained
- 1 ear of corn, cooked and kernels removed (or 1/2 can whole kernel corn, drained)
- 1 cup salsa
- 2 cups shredded cheese (I used a combo of cheddar and mozzarella)
Chicken Meatloaf with Tomato-Balsamic Glaze

1.Preheat oven to 325 degrees
- 1 egg
- 3 tablespoons parsley, finely chopped
- 1 tablespoon tomato paste
- 1 clove garlic, minced
- 1/4 cup 2% milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 pound ground chicken
- 1/2 cup grated Pecorino Romano cheese
- 1/4 cup plus 2 tablespoons Italian seasoned bread crumbs, such as Progresso
- For Tomato-Balsamic Glaze: 1 tablespoon tomato paste
- 1 tablespoon extra virgin olive oil
- 1/2 tablespoon balsamic vinegar
- 1/2 teaspoon sugar
Baked Sweet Potato Chips

- 1 large uncooked sweet potato(es), peeled
- 2 tsp vegetable oil
- 1/8 tsp table salt, or to taste
