Curried Coconut Squash Soup

Saute onions, celery and carrots in olive oil for approximately 5 minutes or until soft
- 1 medium onion, medium dice
- 2 ribs celery, chopped
- 1 carrot peeled and chopped
- 2 tablespoons extra virgin olive oil
- 4 cups peeled, seeded and chopped hard squash (butternut, acorn, etc)
- 1 tablespoon mild curry powder
- 4 1/2 cups water
- 1 can coconut milk
- 3 tablespoons maple syrup
- salt and pepper to taste
Spring Socca with Pesto, Kale, and Asparagus

In a medium bowl, combine chickpea flour, water, 1 1/2 Tbsp
- 1 cup chickpea flour
- 1 cup water
- Extra virgin olive oil
- 1/4 cup oregano, chopped
- 1 1/2 tsp. salt
- 7-8 medium asparagus
- 1/2 lemon, juiced
- 2 cups baby kale, roughly chopped
- 1/2 - 3/4 cup vegan pesto (3/4 of this recipe)
- Extra virgin olive oil
- 1 small shallot, thinly sliced
- Salt and pepper, to season
creamy tahini dressing

Blend until smooth (I use a nutribullet and store in the container)
- 1 cup tahini (wholefoods brand is awesome because in a plastic container you can shake) otherwise take out of jar and put in a nutribullet and blend to combine.
- 1/4 cup fresh lemon juice
- 2 tablespoons raw apple cider vinegar
- 2 cloves garlic (I press mine)
- 1 tablespoon sea salt
- 1 1/2 cups filtered water
Tuscan Bean & Kale Soup

Heat olive oil in a large pot over medium heat
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 28oz can diced tomatoes
- 4-6 cups vegetable stock
- 1 19 oz can white kidney beans, drained and rinsed
- 1 large bunch kale, stems removed, chopped finely
- 1/2 lb green beans, cut into 1″ pieces
- 1/2 cup quinoa
- 2 bay leaves
- 1 teaspoon dried oregano
- salt and pepper
Cuban Corn on the Cob

Combine first 4 ingredients in a shallow dish
- 3 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh cilantro
- 1 1/2 cups freshly grated Parmesan cheese
- 1 teaspoon sea salt
- 8 ears fresh corn, husks removed
- 1/2 cup melted butter
Barbecued Pork Chop

To prepare sauce: Combine first 4 ingredients in a small bowl
- Sauce:
- 1/4 cup packed brown sugar
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon low-sodium soy sauce
- Remaining Ingredients:
- 6 (6-ounce) bone-in center-cut pork chops (about 1/2" thick)
- 1 teaspoon dried thyme
- 1 teaspoon garlic salt
- 1/4 teaspoon ground red pepper
- Cooking spray
Crispy Kale Chips

Preheat the oven to 275 degrees F
- 1 head kale, washed and thoroughly dried
- 2 tablespoons olive oil
- Sea salt, for sprinkling
Chicken Skewers with Soy-Mirin Marinade

Combine first 3 ingredients in a large bowl; add chicken to bowl, and toss to coat
- 1/3 cup mirin (sweet rice wine)
- 1/3 cup low-sodium soy sauce
- 1 teaspoon dark sesame oil
- 1 1/2 pounds skinless, boneless chicken breast halves, cut lengthwise into 1-inch strips
- 1 large red bell pepper, cut into 8 pieces
- 1 large green bell pepper, cut into 8 pieces
- Cooking spray
- 2 tablespoons sesame seeds, toasted
- 3 cups hot cooked rice
Duchess Baked Potatoes

Preparation Place potatoes in a large pot and pour in water to cover by 2"; season with salt
- 12 medium Yukon Gold potatoes (3 1/2–4 pounds)
- Kosher salt
- 5 large egg yolks
- 2 garlic cloves, finely grated
- 1 1/4 cups heavy cream
- 3/4 cup sour cream
- 10 tablespoons unsalted butter, melted
- 1 teaspoon pink or black peppercorns, finely ground

- 1 (3 to 4-pound) boneless chuck roast
- 1 teaspoon House Seasoning, recipe follows
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 cup thinly sliced onion wedges
- 3 cloves garlic, crushed
- 2 bay leaves
- 1 (10 3/4-ounce) can cream of mushroom soup
- 1/4 cup red wine
- 2 tablespoons Worcestershire sauce
- 1 tablespoon beef bouillon granules
- 3/4 cup water
