The Incredible Vegan Frittata!

For the crust, pre-heat your oven to 375/190/gas mark 5 and lightly grease your springform pan
- Makes: 1 8″ springform pan – enough for 4 people
- 1 3/4 cups cooked brown rice
- 1 egg-replacer (you can use flax, I used Organ egg replacer)
- 1 yellow pepper, chopped
- 1/2 an onion, chopped
- 4 spring onions/scallions, chopped with the white and green parts separate
- 4 cloves garlic, crushed and chopped
- 3 mushrooms, chopped
- 100 g chopped kale
- 100 g baby spinach
- A large handful fresh basil leaves
- 1 package firm tofu
- 2 teaspoons Dijon mustard
- 1/2 teaspoons turmeric
- 2 tablespoons soy sauce (tamari)
- 3 tablespoons nutritional yeast
- 2/3 cup soy or almond milk
- 2 teaspoons arrowroot
- 1 tablespoon olive or vegetable oil
Chocolate Carmel Oatmeal Chews

Preheat oven to 350. Spray 9x13 pan with nonstick cooking spray
- 2 cups quick or old-fashioned oats
- 1 3/4 cups all-purpose flour, divided
- 3/4 cup packed brown sugar
- 1 teaspoon baking soda
- 1 cup butter or margarine, melted
- 1 cup butterscotch caramel ice cream topping
- 1/2 cup chopped pecans
- 1 package (6 ounces) semi-sweet chocolate morsels
Extra Sharp Raw Vegan Cheddar Cheese Ball

Pour the soaking water off the cashews and sun-dried tomatoes and then rinse them with fresh purified water
- 1 1/2 cups raw cashews, soaked in purified water for 4-6 hours
- 2 packed tablespoons dry pack sun dried tomatoes, snipped into small pieces with kitchen scissors then soaked in the purified water with the cashews
- 1/4 cup nutritional yeast
- 1 tablespoon dry sherry (optional)
- 1 heaped tablespoon mellow white miso (use chickpea miso if you are sensitive to soy)
- 1 tablespoon raw apple cider vinegar
- 1 teaspoon sea salt
- 1 teaspoon onion powder
- 1/2 teaspoon dry ground mustard powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon turmeric
- dash cayenne
- 1/2 cup organic unrefined coconut oil (optional will change taste)
Grilled Corn, Crema Mexicana & Cilantro Crostini

- 2 ears corn, shucked
- 1 Tablespoon vegetable oil
- Kosher salt and freshly ground black pepper
- 12 slices of ciabatta bread
- 1/2 garlic clove
- 1/4 cup crema mexicana or sour cream
- 3 tablespoons crumbled feta
- Lime wedge
- Cilantro leaves
- Chili powder

Preheat oven to 325°. In a medium sized bowl, whisk together your aminos, liquid smoke, maple syrup and paprika
- 2 cups large flaked unsweetened coconut
- 1 1/2 Tablespoons Braggs Liquid Aminos (coconut aminos or tamari would also work)
- 1 Tablespoon maple syrup
- 1/2 Tablespoon liquid smoke – Colgin brand is plant-based, some are not
- 1/2 teaspoon smoked paprika

- 3/4 cups unroasted cashews, soaked in water for 2 hours

- 2 cups vegetable broth
- 1 1/2 tablespoons organic cornstarch
- 1 tablespoons nutritional yeast (optional)
- 1 roasted red peppers (jarred or homemade)
- 1 tablespoons tomato paste
- 1 1/2 teaspoons pizza seasoning (see note)
- 1/2 teaspoon salt
- 1 teaspoon ground mustard
- 1/2 teaspoon turmeric

- 1/3 cup extra-virgin olive oil
- 1 teaspoon chili or dried chipotle powder
- Zest of 2 large limes, optional
- 2 whole wheat or plain pita breads, split in half horizontally
