Edamame-Avocado Dip

1. In a food processor combine edamame, avocado, onion, lemon juice, pesto, salt, and pepper
- 1 12-oz, pkg. frozen shelled edamame (sweet soybeans), thawed
- 1 medium avocado, halved, seeded, peeled, and
- cutup
- 1/4 cup chopped onion
- 3 Tbsp. lemon juice
- 2 Tbsp. purchased basil pesto
- 3/4 tsp. sea salt or kosher salt
- 1/4 tsp. freshly ground black pepper
- Chopped tomato (optional)
- Pita chips or tortilla chips
Chicago Deep-Dish Pizza

1. In a large bowl, combine 1 1/2 cups flour, cornmeal, yeast, sugar and salt
- 2 to 2 1/2 , cups all-purpose flour
- 1/4 cup cornmeal
- 1 pkg. (1/4 oz.) quick-rise yeast
- 1 1/2 tsp sugar
- 1/2 tsp salt
- 1 cup water
- 1/3 cup olive oil
- TOPPINGS
- 1/2 lb. sliced fresh mushrooms
- 4 tsp olive oil, divided
- 1 can (28 oz.) diced tomatoes, well drained
- 1 can (8 oz.) tomato sauce
- 1 can (6 oz.) tomato paste
- 2 to 3 garlic cloves, minced
- 1/2 tsp salt
- 1/4 tsp each dried basil, oregano and pepper
- 3 cups (12 oz.) shredded part-skim mozzarella cheese, divided
- 1 lb. bulk Italian sausage, cooked and crumbled
- 1/4 cup grated Parmesan cheese
- Thinly sliced fresh basil leaves, optional
Lemon Pound Cake (Greenbrier)

In food processor, pulse sugar and zest, until combined
- 16 tbs unsalted butter
- 1 1/2 cups cake flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cup sugar
- 2 tbs grated lemon zest, plus 2 tsp lemon juice
- 4 eggs, room temperature
- 1 1/2 tsp vanilla
Layered Mocha Cheesecake

Combine cookie crumbs and butter; press onto the bottom of a greased 9 inch springform pan
- Filling:
- 1 1/2 cups cream filled chocolate sandwich cookie crumbs
- 1/4 cup butter, melted
- 2 tbs plus 1 1/2 tsp instant coffee granules
- 1 tbs boiling water
- 1/4 tsp cinnamon
- 4 (8 oz pkg) cream cheese, softened
- 1 1/2 cups sugar
- 1/4 cup flour
- 4 eggs, lightly beaten
- 2 tsp vanilla
- 2 cups semisweet chocolate chips, melted and cooled
- Glaze:
- 1/2 cups semisweet chocolate chips
- 3 tbs butter
- Chocolate covered coffee beans, optional
Cherry Pie Supreme (Mom)

Preheat oven to 425 degrees Prepare pie shell
- 9 inch unbaked pie shell
- 1 can (1 lb.5 oz) cherry pie filling (I now buy 2 cans)
- 4 pkg. (3 oz) soft cream cheese
- 1/2 cup sugar
- 2 eggs
- 1/2 tsp. vanilla extract
- whipping cream

- 1 cup water
- 2 tbs vegetable oil

- 2/3 cup loosely packed basil leaves
- 2 tbs pine nuts
- 1 peeled garlic clove
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/3 cup olive oil
- 1/3 cup Parmesan cheese
Chicken, Spinach & Goat Cheese Pizza

Preheat oven to 500° with a baking stone on bottom rack
- 4 oz goat cheese, softened
- 2 tbs milk
- 2 tsp minced fresh tarragon
- 1 tsp honey
- 1 tsp minced lemon zest
- 1/2 tsp minced fresh garlic
- salt
- pepper
- 1 thin style pizza dough
- 2 tsp olive oil
- 1 cup shredded rotisserie chicken
- 1 cup fresh baby spinach
- 1/3 cup thinly sliced shallots
- 1 tsp olive oil
- 1/4 cup each thinly sliced kalamata olives, jarred roasted red peppers
- Red pepper flakes to taste
- Shredded Parmesan
Easy Spinach Lasagna

Mix together ricotta, cottage cheese and spinach together in a bowl
- 1 box no bake oven ready lasagna noodles
- 1 jar of spaghetti sauce
- 1 (15 oz container) of ricotta cheese
- 1 (12 oz container) of cottage cheese
- 1 box of chopped spinach, thawed, drained (squeeze water out)
