Beef and Cannellini Bean Minestrone

In a large saucepan or Dutch oven, add the oil and heat over medium heat
- 3 tablespoons olive oil
- 1 onion, finely diced
- 1 large carrot, peeled and diced into 1/4-inch pieces
- 1 rib celery, trimmed and diced into 1/4-inch pieces
- Kosher salt and freshly ground black pepper
- 8 ounces lean (8 percent fat) ground beef
- 3 garlic cloves, minced
- 1 tablespoon tomato paste
- 4 cups low-sodium beef broth
- 1 (28-ounce) can diced tomatoes
- 1 (15-ounce) can cannellini beans, rinsed and drained

- 1/3 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper

- 1 cup milk
- 6 bread slices
- 2 pounds ground beef
- 1 cup grated Parmesan
- 1 teaspoon salt
- Freshly ground black pepper
- 1/4 teaspoon seasoned salt, such as Lawry's
- 1/4 to 1/2 cup minced flat-leaf parsley
- 4 eggs, beaten
- 8 to 12 thin bacon slices
- 1/2 cup ketchup
- 6 tablespoons brown sugar
- 1 teaspoon dry mustard
- Dash or 2 hot sauce (more if you like)
- Dash or 2 Worcestershire sauce
Summer Corn Fettuccine

This pasta tastes like corn chowder, a summer favorite of mine
- Salt
- 1 pound fettuccine
- Extra-virgin olive oil, for drizzling
- 6 slices smoky bacon, chopped
- 6 ears corn on the cob, shucked
- 3 shallots, finely chopped
- 1 small red bell pepper, seeded and chopped
- Freshly ground black pepper
- 1 cup half-and-half or cream - whatever you put in your morning coffee
- 1/2 cup chicken stock or dry white wine
- 2 tablespoons chopped fresh thyme leaves
- A few dashes hot sauce or 1 or 2 pinches cayenne pepper
- 1 cup grated Parmigiano-Reggiano or Pecorino Romano
- 1/2 cup torn sweet basil leaves or 1/4 cup chopped tarragon leaves
Sweet Couscous with Nuts and Dried Fruit

In a medium saucepan, combine the water, sugar, cranberries, apricots, and cherries

- 1/2 cup sugar
- 1/3 cup dried cranberries
- 1/3 cup dried apricots, chopped
