Smoky Panzanella with Market Vegetables

Preheat the oven to 400 degrees F
- 1 loaf French bread, cut or torn into 1-inch cubes (about 6 cups)
- Extra-virgin olive oil
- Kosher salt and freshly cracked black pepper
- 1 yellow bell pepper, seeded and cut into 1-inch dice
- 1 orange bell pepper, seeded and cut into 1-inch dice
- 1/4 cup red wine vinegar
- 1/2 teaspoon Dijon mustard
- 1 clove garlic, grated or pressed
- 1/2 cup olive oil
- 8 ounces smoked mozzarella, cut into 1/3-inch dice
- 8 ounces sugar snap peas, trimmed and sliced into thirds on the bias
- 8 ounces cherry heirloom tomatoes, halved
- 1 cup fresh basil leaves, torn
Bourbon Chicken

Place the chicken thighs in a shallow 9 X 13-inch baking dish
- 1 1/2 pounds chicken thigh meat
- 2 tablespoons olive oil
- 1/4 cup light soy sauce
- 2 tablespoons red rice vinegar or red wine vinegar
- 2 tablespoons good bourbon whiskey
- 2 tablespoons brown sugar, or to taste (up to 4 tablespoons if desired)
- 1 green onion, washed and cut into thirds
- 2 slices ginger
- 2 cloves garlic, crushed

Directions Bring a couple inches of water to a boil in a saucepan and add some salt

- 1 cup long-grain white rice, jasmine rice or brown rice
- Zest of 1 lime, plus lime wedges for serving
