Peach Chutney Recipe

This is my take on several different chutney recipes combined
- Ingredients
- 2-1/2 cups white vinegar
- 1 cup packed brown sugar
- 3/4 cup sugar
- 1 medium sweet red pepper, finely chopped
- 1 small onion, finely chopped
- 1 banana pepper, seeded and finely chopped
- 2/3 cup golden raisins
- 1 tablespoon minced fresh gingerroot
- 1 teaspoon canning salt
- 6 whole cloves
- 1 cinnamon stick (3 inches), cut in half
- 3 pounds fresh peaches, peeled and chopped
Layered Taco Salad

In a small skillet, cook beef over medium heat until no longer pink; drain

- 2/3 cup water
- 1 envelope taco seasoning
- 2 medium ripe avocados, peeled and pitted
- 2 tablespoons finely chopped red onion

- 1 can (2-1/4 ounces) sliced ripe olives, drained
- 2 medium tomatoes, chopped

- 2 cups (8 ounces) shredded cheddar cheese
- 1 cup salsa
- 2 cups (16 ounces) sour cream

Mini Corn Dogs Recipe

- HONEY MUSTARD SAUCE:
- Ingredients
- 1-2/3 cups all-purpose flour
- 1/3 cup cornmeal
- 3 teaspoons baking powder

- 3 tablespoons cold butter
- 1 tablespoon shortening

- 3/4 cup 2% milk
- 24 miniature hot dogs

Sweet and Savory Meatballs

This hearty appetizer is a real crowd-pleaser
- 1 lb 95% lean ground beef
- 1/2 c. fat-free ricotta cheese (or use low-fat; optional)
- 1/2 c. raisin, coarsely chopped
- 3/4 t. salt
- 1/4 t. freshly ground black pepper
- 1/2 c. finely chopped onion
- 1 can (15 oz) low-sodium tomato sauce
- 1 tbsp balsamic vinegar
- 1/4 c. coarsely chopped fresh parsley, for serving
Three-Cheese Potato Gratin

- Butter, for greasing the baking dish
- 2 tablespoons extra-virgin olive oil
- 1 large onion, chopped
- 2 large cloves garlic, chopped
- 1/3 cup heavy whipping cream
- 1/4 cup low-sodium chicken broth
- 1 teaspoon minced fresh rosemary
- 1 teaspoon coarse kosher salt
- 3/4 teaspoon freshly ground black pepper
- 5 small Yukon gold potatoes, peeled, cut into 1/8-inch-thick rounds (about 1 1/4 pounds)
- 1 large yam (red skinned sweet potatoes), cut into 1/8-inch-to-1/4-inch-thick rounds
- 1 1/2 cups coarsely grated gruyere cheese (about 5 ounces)
- 1/2 cup coarsely grated Asiago cheese (about 1 1/2 ounces)
- 1/2 cup finely grated Pecorino Romano cheese (about 1 1/2 ounces)
- 2 tablespoons chopped fresh flat-leaf parsley, optional
Potato Casserole Bread Recipe

This bread features delicious russet potatoes produced in our state
- 2 packages (1/4 ounce each) active dry yeast
- 1/2 cup warm water (110° to 115°)
- 1 can (12 ounces) evaporated milk
- 2 cups mashed potatoes (without added milk and butter)
- 8 bacon strips, cooked and crumbled
- 1/4 cup butter, softened
- 2 eggs
- 3 tablespoons sugar
- 2 tablespoons dried minced onion
- 1 tablespoon caraway seeds
- 1 teaspoon garlic salt
- 1 teaspoon salt
- 6-1/4 to 6-3/4 cups all-purpose flour
Hearty Red Beans & Rice

In a skillet over medium heat, sauté green pepper, onions, celery and parsley in reserved drippings until tender
- 3 slices bacon, crisply cooked and crumbled, drippings reserved
- 1 green pepper, chopped
- 1 onion, chopped
- 1/2 c. green onion, chopped
- 1/2 c. celery, chopped
- 2 T. fresh parsley, chopped
- 1/2 lb. Polish sausage, sliced
- 2 15-oz. cans kidney beans, drained and rinsed
- 6-oz. can tomato paste
- 2-oz. jar chopped pimentos, drained
- 2 T. catsup
- 1-1/2 t. Worcestershire sauce
- 1 t. chili powder
- 3 c. cooked rice
Grilled Vegetable Calzones

These calzones can be made from start to finish on the backyard grill
- 2 red peppers, thinly sliced
- 1 large onion, thinly sliced
- 2 cloves garlic, sliced in half
- 4 canned artichoke hearts, rinsed and quartered
- 3/4 cup Daisy Brand 2% cottage cheese, drained*
- 1/2 cup chopped parsley or basil
- 8 ounces (1/2 pound) whole-wheat pizza dough
- To drain the cottage cheese, place it in a coffee filter and allow the liquid to drain off before using in your calzon recipe.
