Pepita (Pumpkin Seed) Brittle (Pati Jinich)

Heat a medium skillet over medium-low heat
- 2 2 2 cups raw hulled pumpkin seeds or pepitas, lightly toasted
- 1 1 1 tablespoon unsalted butter at room temperature divided
- 1/2 1/2 1/2 cup water
- 1 1 1 cup brown sugar
- 1 1 1 cup granulated sugar
- 2 2 2 tablespoons piloncillo grated or more brown sugar
- 2 2 2 tablespoons corn syrup
- to oil to grease the spatula
- 1/2 1/2 1/2 teaspoon baking soda
- Sprinkle of kosher or coarse sea salt (optional)
Pumpkin Pie Ice Cream

This recipe has been written for the C-Series machines with Variable Speed control and Standard 64-ounce container
- 2 Tablespoons milk
- 2 Tablespoons cream cheese
- 1/4 pie pumpkin, baked and flesh removed, or 1/2 cup solid pack canned pumpkin
- 1/2 cup firmly packed brown sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice
- 3 cups ice cubes
Classic Molded Cranberry Sauce (Williams Sonoma)

Lightly coat the inside of a ceramic cranberry mold with nonstick cooking spray
- 1 1/4 lbs. fresh cranberries
- 1 1/3 cups sugar
- Zest of 2 oranges (2 tsp.)
- 3/4 cups plus 2 Tblsp. fresh orange juice
- Pinch of salt
- 1 cup water
- 1 envelope unflavored gelatin (1 Tbsp.)
Christmas Cherries (Pioneer Woman)

In the bowl of a stand mixer with the paddle attachment, cream the butter and sugar until fluffy
- 2 sticks salted butter, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 egg yolks, stirred
- Zest and juice of 1 lemon
- Zest of 1 orange
- 2 cups all-purpose flour, sifted twice
- Green and red candied cherries, for topping

- 3 extra large eggs, at room temperature
- 1 teaspoon vanilla extract

- 3 cups of flour, sifted
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup chopped almonds, lightly toasted
- 1/2 cup sliced almonds
