- For the pie crust:

- For the soup:
- 6 cups low-sodium chicken broth
- 2 cups whole milk
- 2 sticks (8 ounces) unsalted butter, cut into chunks
- 2 tablespoons minced garlic (about 3 cloves)
- 1 cup all-purpose flour
- 4 teaspoons kosher salt, plus more to taste
- 1 1/2 teaspoons freshly ground black pepper, or more to taste
- 1 large russet (Idaho) potato, peeled and cut into 1/2-inch cubes
- 1/2 pound diced carrots (2 cups)
- 1 cup frozen peas
- 1 cup frozen pearl onions
- 1/4 pound deli ham, thinly sliced
- 1 pound skinless rotisserie chicken meat, cubed (3 cups)
- 1/2 cup heavy cream
