- 6 cups cubed brioche or challah bread
- 1 1/2 cups sugar
- 1/2 teaspoon freshly grated nutmeg
- 1/2 teaspoon cinnamon
- 1 teaspoon finely grated lemon zest
- 1 teaspoon finely grated orange zest
- Pinch of salt
- 4 pounds Granny Smith apples, peeled, cored and thinly sliced
- 1/2 cup apple cider
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh orange juice
- 3 tablespoons cold unsalted butter
- Vanilla ice cream or whipped cream, for serving
Vietnamese Chicken-Noodle Salad

Preheat the oven to 350°
- 3/4 cup sesame seeds
- 3/4 cup canola oil
- 3 tablespoons fresh lime juice, plus lime wedges, for serving
- 3 tablespoons Asian fish sauce
- 2 garlic cloves, crushed
- 2 tablespoons minced fresh ginger
- Kosher salt
- Freshly ground pepper
- 8 ounces rice vermicelli
- 4 pieces leftover Oven-Fried Chicken— bones and skin discarded, meat shredded (about 3 cups)
- 2 celery ribs, thinly sliced
- 1 carrot, shredded

Green Goddess Chicken Salad

In a food processor, pulse the anchovies, garlic, parsley, basil, dill and oregano until coarsely chopped
- 2 oil-packed anchovies, drained
- 1 small garlic clove
- 1/2 cup packed flat-leaf parsley leaves
- 1/4 cup packed basil leaves
- 1/4 cup coarsely chopped dill
- 1 tablespoon oregano leaves
- 3/4 cup mayonnaise
- 2 1/2 tablespoons fresh lemon juice
- 2 tablespoons snipped chives
- Kosher salt and freshly ground pepper
- One 1-pound loaf of ciabatta—bottom crust reserved for another use, bread cut into 1-inch cubes
- One 2-pound rotisserie chicken—skin and bones discarded, meat pulled into large bite-size pieces
- 8 piquillo peppers (from a 9.8-ounce jar), drained and quartered lengthwise
- 3 inner celery ribs with leaves, thinly sliced
- 1/2 cup pitted kalamata olives, halved
Zucchini Ribbons and Peaches with Macadamia Cream

Light a grill. Brush the zucchini and peaches with half of the oil and season with salt and pepper
- 3 zucchini (1 1/2 pounds total), sliced lengthwise 1/4 inch thick
- 3 peaches, halved
- 1/4 cup extra-virgin olive oil
- Salt
- Freshly ground pepper
- 2 tablespoons chopped parsley
- 2 tablespoons finely chopped mint
- 2 tablespoons macadamia nuts, toasted and coarsely chopped
- 1/4 cup Macadamia Cream (optional)
Bill Nicholson's Krispy Kreme Bread Pudding with Butter Rum Sauce

Preheat oven to 350 degrees F
- 2 dozen Krispy Kreme donuts
- 1 (14-ounce) can sweetened condensed milk (not evaporated)
- 2 (4.5-ounce) cans fruit cocktail (undrained)
- 2 eggs, beaten
- 1 (9-ounce) box raisins
- 1 pinch salt
- 1 or 2 teaspoons ground cinnamon
- Butter Rum Sauce, recipe follows
Chicken Breasts with Mushroom Cream Sauce

Season chicken with pepper and salt on both sides
- 2 5-ounce boneless, skinless chicken breasts, trimmed and tenders removed (see Tip)
- 1/2 teaspoon freshly ground pepper
- 1/4 teaspoon salt
- 1 tablespoon canola oil
- 1 medium shallot, minced
- 1 cup thinly sliced shiitake mushroom caps
- 2 tablespoons dry vermouth, or dry white wine
- 1/4 cup reduced-sodium chicken broth
- 2 tablespoons heavy cream
- 2 tablespoons minced fresh chives, or scallion greens

Simmer two cups apple juice with spices until reduced by half
- 2 cups apple juice
- pinch of cinnamon
- pinch of cloves
- pinch of ginger
- Slices of apples

Bring 3 cups water to a boil in a large pot
- 2 1 1/4-pound lobsters (female if you have a choice; you want the roe)
- 4 tablespoons (1/2 stick) unsalted butter, divided
- 1 large shallot, chopped
- 1 tablespoon brandy or Cognac
- 2 sprigs thyme
- 2 cups half-and-half
- Kosher salt
- Freshly ground white pepper

Chicken Cacciatore (Electric Skillet) Recipe

Preheat 12-inch electric skillet to 350F
- 6 x Boneless, skinless chicken breast halves
- (about 1 1/2 pounds)
- 1/3 c. All-purpose flour
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1/4 c. Oil
- 1 lrg Onion, sliced and separated into rings
- 1 lrg Green pepper, cut into strips
- 1/2 lb Fresh mushrooms, sliced
- 2 x Cloves garlic, chopped
- 3 can Italian tomatoes (14 1/2 Ounce, each), undrained
- 1 tsp Dry oregano leaves
- 1/2 tsp Dry basil leaves
- Warm cooked spaghetti
