Spring Side Salad

1. Add the champagne vinegar to a bowl; stir in 1 TBS shallots, and allow to stand for 5 minutes
- 2 TBS champagne (or white wine) vinegar
- 1 shallot, finely chopped
- 4 TBS olive oil
- 1 TBS fresh tarragon, finely chopped
- Kosher salt and pepper to taste
