Pineapple Upside-Down Muffins

Preheat oven to 400 degrees F
- For the Topping:
- 2 tablespoons packed light brown sugar
- 2 tablespoons chopped walnuts or pecans (optional)
- 1 10-ounce can pineapple slices
- For the Muffins:
- 3/4 cup whole-wheat flour
- 3/4 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon ground cinnamon
- 2 large eggs
- 1/2 cup packed light brown sugar
- 1/4 cup canola oil
- 2 tablespoons pineapple juice or orange juice
- 1 teaspoon vanilla extract
- 1 8-ounce can crushed pineapple (not drained)
- 1 cup grated carrot (1 large)
- 1/2 cup old-fashioned oats
- 3/4 cup raisins, preferably baking raisins (see Ingredient note)
- 1/4 cup chopped walnuts or pecans (optional)
Chocolate Meringue Pie

Mix sugar, cocoa, salt, and flour together in a large sauce pan
- 1 cup sugar
- 1/3 cup flour
- pinch of salt
- 1/2 tsp. vanilla
- 2 cups milk
- 3 egg yolks ( save the whites for the meringue)
- 2 tablespons cocoa powder
- 1 tablespoon butter
- 1 9 inch baked pie shell
- 2 tablespoons powdered sugar for the egg whites

1. In a large mixing bowl beat butter on medium to high speed for 30 seconds
- 2/3 cup butter, softened
- 3/4 cup granulated sugar
- 1 teaspoon baking powder

- 1/4 cup Gold Medal® all-purpose flour
- 1 cup water
- 1/3 cup vegetable oil

- 1 bag (8 oz) milk chocolate-coated toffee bits
- 1 can (13.4 oz) dulce de leche (caramelized sweetened condensed milk)
- Sweetened whipped cream, if desired
- Caramel topping, if desired
