Cerveza-Battered Fish Tacos with Quick-Pickled Onion and Cucumber

Fill a large pot with oil halfway up the pot
- Vegetable oil, for frying
- 2 cups all-purpose flour (1 cup)
- 3 teaspoons ground cumin (1 1/2 t)
- 3 teaspoons cayenne pepper (1 1/2 t)
- 3 teaspoons salt (1 1/2 t)
- 12 ounces beer (6 oz.)
- 3 (8-ounce) tilapia fillets, cut into chunks
- 8 (8-inch) flour tortillas

- 1 Tbsp. finely diced onion

Whisk together the flour, salt, and baking powder
- 2 cups King Arthur Unbleached All-Purpose Flour
- 1/2 teaspoon salt*
