Spicy Oven-Fried Catfish with Lemon Cream

- 1/4 tsp black pepper
- 1 1/2 cups Panko Japanese breadcrumbs

- Garnish lemon wedges or parsley sprigs.
Roasted Broccoli with Garlic

- 1 bunch broccoli (about 1 1/2 pounds), cut into florets, stems peeled and sliced or diced

- 3 cloves garlic, sliced

- Essence
- 2 cups Creole Mustard
- 2 cups all-purpose flour
- 2 eggs, beaten
- 2 tablespoons milk

Emeril's Red Beans and Rice

In a large saucepan, heat the oil
- 2 tablespoons vegetable oil
- 2 cups chopped onions
- 1/2 cup chopped celery
- 1/2 cup chopped bell peppers
- Salt and cayenne, to taste
- 4 bay leaves
- 4 sprigs fresh thyme
- 1 pound smoked ham hocks
- 1/2 pound boiled picked pork meat
- 1 pound dried red beans, rinsed and sorted over, soaked and drained
- 3 tablespoons chopped garlic
- 10 cups chicken stock, or water
- 4 cups cooked white rice
- 1/4 cup chopped green onions

Instructions : Put the water in a measuring cup that is larger then the amount of water you are using

- 3 pound beef roast such as chuck roast
- 1 envelope of dry Italian salad dressing mix
- 1 envelope of dry ranch salad dressing mix
- 1 envelope of dry brown gravy mix
- 2 cups water
King Ranch Chicken

Cook hen (or buy rotisserie chicken or diced chicken already cooked) Heat soups, rotel, and chicken broth
- 1 hen
- 1 dz torillas (i use corn)
- 2 cups sharp cheddar
- 1 cup onion
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 can rotel
- 1/2 can chicken broth
Momoo's Macaroni Salad

Boil and drain macaroni. Toss with milk
- 16 oz macaroni
- 1/4 c milk
- 1 cup sour cream
- 2 tbs brown bouillion seasoning
- salt, pepper, garlic and tabasco to taste
- 1 onion chopped
- 1 bell pepper chopped
- 2 tomatoes diced
- 2 carrots grated
- 4 hard boiled eggs chopped
- 2-3 tbs sweet relish
- several dashes of white wine vinegar.
Cowboy Cavier

Combine tomatoes, avocado, onion, black beans, black eyed peas, corn, pepper, jalapeño, and cilantro in bowl
- Dressing:
- 3 roma tomatoes, seeds removed, diced
- 2 ripe avocados, diced
- 1 15 oz can black beans, rinsed and drained
- 1 15 oz can blacked eyed peas, rinsed and drained
- 1 1/2 cups frozen sweet corn thawed ( I jus usually toss it in the alas frozen unless i plan on eating immediately
- 1 bell pepper diced (I usually use 1/2 a green and 1/2 a red for color but you can use any color)
- 1/3 cup red onion diced
- 1 jalepeno pepper diced into very small pieces
- 1/3 cup cilantro finely chopped
- 1/3 cup olive oil
- 2 tbsp red wine vinegar
- 2 tbsp lime juice (fresh preferred)
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp garlic powder
Tiffany's Chocolate Cake

- 6 oz. pkg. of potato chips (crushed really fine) OR
- (2 cups of really finely crushed potato chips)
