Jalapeño Scalloped Potatoes

Looking for an awesome side dish? This cheesy and delicious Jalapeño Scalloped Potatoes recipe is for you!
- 6 fresh jalapeños, sliced in half horizontally, remove seeds then dice
- 1 1/2 cup half n half
- 3 medium baking potatoes, sliced 1/8-inch thick
- Sea salt
- 20 ounces Monterrey Jack cheese, grated
- 1/4 cup pecorino or Parmesan cheese, grated
- Slurry
- 3 Tbl flour
- 1/2 cup water
Spinach Casserole

Melt butter on low heat in a medium size pot
- 4 boxes chopped frozen Spinach. (Thaw Spinach in the microwave and squeeze out most of the water in a colander)
- 2 cans Cream of Mushroom Soup.
- 4 Cups Shredded White Sharp Cheddar Cheese. (Save some for topping)
- 2 Cups Pepperidge Farm Herb Seasoned Stuffing Crumbs (Save some for topping)
- 2 Eggs.
- 1 medium size onion chopped
- 1 stick melted Butter.
- Small can of French Fried Onions. (Save some for topping)
- Salt and Pepper.

- 1 Box Uncle Ben’s Long Grain & Wild Rice w/ Herbs
- 2 cans Cream of Mushroom Soup
- 1 ½ cans of chicken broth
- 8 oz sliced mushrooms ( sauteed )
- 1 tsp parsley
- 1 tsp garlic salt
- 6-8 pieces of chicken

- 3 stalks celery, chopped
