Preheat oven to 350. Cut potatoes into quarters
- 8 large red potatoes
- 1 c ranch salad dressing
- 1 c sour cream
- 1 c cheddar cheese, divided
- 1/4 c crumbled cooked bacon
- 1 tsp salt
Crispy Oven-Fried Chicken

Preheat oven to 375. Line a baking sheet with foil; grease foil
- 2 c bread cubes or crackers
- 1 tbsp dried parsley or 3 tbsp chopped fesh parsley
- 1/2 c grated Parmesan cheese
- 1 (2 1/2 lb) chicken, quartered
- 2 tsp olive oil
- salt and pepper
- 1 c buttermilk
- 1 tsp paprika
Spicy Baked Sweet Potato Fries

Line cookie sheet with foil Preheat oven to 450 In small mixing bowl, combine all ingredients
- 2 medium sweet potatoes, washed and cut (lengthwise) into strips (1/3 in on each side)
- 1 1/2 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/4 tsp salt
- 1/2 tsp onion powder
Fast Breakfast Wraps

Heat oil on a medium skillet over medium-high heat
- 1 tbsp vegetable oil
- 6 eggs
- 2 tbsp milk
- 1 tsp salt
- 1/2 tsp pepper
- 1 c shredded cheddar cheese
- 3/4 c chunky salsa
- 6 large flour tortillas
Springtime Chicken Supper

Heat butter in a large skillet over medium heat; add chicken
- 2 tbsp butter or margarine
- 1 (3lb) chicken, cut up
- 2 large tomatoes, peeled, cut into wedges
- 4 green onions, sliced
- 2 stalks celery, sliced
- 2 small zucchini, cut into 1-inch pieces
- 1 (10 oz) can chicken-mushroom soup
- 1 tsp salt
- 1/4 tsp Worcestershire sauce
- 1 tbsp dried parsley
Chocolate Mouse Cake

Prepare to cake tins (23 cm) - use either butter or non-stick spray
- 2 cups flour
- 2 cups caster sugar
- 4 tsp baking powder
- pinch of salt
- 1/4 tsp fine cloves
- 1/4 tsp fine nutmeg
- 1/2 tsp fine cinnamon
- 125 gr butter
- 1 cup boiling water
- 1/2 cup cocoa powder(the best you can afford)
- Filling
- 500 ml cream
- 1 packet instant chocolate pudding
- 1 cup milk
- berries of your choice
- chocolate for decorating - make either chocolate curls or shavings.
Sour Cream Chicken Quiche

Preheat oven to 400 degrees F (200 degrees C)
- 1 (9 inch) frozen pie crust, thawed
- 1 tablespoon olive oil
- 1/4 cup chopped onion
- 1/4 cup chopped green bell pepper (I use a trio blend of peppers)
- 1 tablespoon all-purpose flour
- 1 cup chopped cooked chicken breast
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/4 teaspoon black pepper
- 1/2 cup shredded Cheddar cheese
- 1/4 cup shredded Swiss cheese
- 2 eggs, slightly beaten
- 3/4 cup milk
- 3/4 cup sour cream
Hot Sauce

Mix all ingredients. Bring to a boil, simmer for 15 min, then refrigerate
- 6 15oz cans Tomato sauce
- 1/2 onion (chopped)
- 2-3 cloves of garlic (chopped)
- 1 sm can jalapenos (chopped)
- 3-4 pinches cilantro
- salt and pepper to taste
Chicken Piccata (Sissy)

Beat egg with 1 tablespoon Real lemon juice
- 4 chicken breast halves, skinned & boned
- 1 egg
- 3 tablespoons Real Lemon juice from concentrate
- 1/4 cup unsifted flour
- 1/8 teaspoon each of garlic powder & paprika
- 1/4 cup margarine or butter
- 2 teaspoons Wyler’s chicken flavor instant bouillon or 2 cubes
- ½ cup boiling water
Chicken Florentine

Preheat oven to 325. Pound chicken to 1/4-inch thickness between plastic wrap; set aside
- 4 skinless, boneless chicken breasts
- 1 (9 oz) pkg frozen chopped spinach, thawed
- 4 mushrooms, chopped
- 1/2 c chopped celery
- 1/4 c chopped onion
- 3 tbsp butter, divided
- 2 slices day-old bread, crumbled
- salt and pepper
