This is a recipe that I found in one of the Diabetic Living Cookbooks

  • 1 cup all-purpose flour
  • 1/4 tsp baking soda
  • 1/4 cup butter
  • 2/3 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup packed brown sugar
  • 1/4 cup buttermilk or sour milk
  • 1 tsp vanilla
  • Nonstick Cooking Spray
  • Powdered Sugar
  • *To make 1/4 cup of sour milk, place 3/4 tsp of lemon juice or vinegar in a glass measuring cup. Add enough milk to make 1/4 cup of total liquid; Stir. Allow the mixture to stand for 5 minutes before using.
